CLASSIC MEATLOAF
The secrets to this meatloaf are fresh, very finely diced vegetables that give it moisture and flavor--and a light touch in mixing together the ingredients. This hearty meatloaf is the perfect meal for cool fall and winter evenings, served with mashed potatoes and simple mushroom gravy.

- Preheat the oven to 325 degrees F.
- Place the carrot, celery, onion, red bell pepper, mushrooms, and garlic in a food processor, and pulse until very finely chopped, almost to a puree. Place the minced vegetables into a large mixing bowl, and mix in ground chuck, Worcestershire sauce, and egg. Add Italian herbs, salt, black pepper, and cayenne pepper. Mix gently with a wooden spoon to incorporate vegetables and egg into the meat. Pour in bread crumbs. With your hand, gently mix in the crumbs with your fingertips just until combined, about 1 minute.
- Form the meatloaf into a ball. Pour olive oil into a baking dish and place the ball of meat into the dish. Shape the ball into a loaf, about 4 inches high by 6 inches across.
- Bake in the preheated oven just until the meatloaf is hot, about 15 minutes.
- Meanwhile, in a small bowl, mix together brown sugar, ketchup, Dijon mustard, and hot sauce. Stir until the brown sugar has dissolved.
- Remove the meatloaf from the oven. With the back of a spoon, smooth the glaze onto the top of the meatloaf, then pull a little bit of glaze down the sides of the meatloaf with the back of the spoon.
- Return meatloaf to oven, and bake until the loaf is no longer pink inside and the glaze has baked onto the loaf, 30 to 40 more minutes. An instant-read thermometer inserted into the thickest part of the loaf should read at least 160 degrees F (70 degrees C). Cooking time will depend on shape and thickness of the meatloaf.

- Cut three 25x3-in. strips of heavy-duty foil; crisscross so they resemble spokes of a wheel. Place strips on bottom and up sides of a 6- or 7-qt. slow cooker. Coat strips with cooking spray. Top with potatoes., In a large bowl, combine eggs, onion, tomato sauce, saltines, ketchup, garlic, Worcestershire sauce, seasoned salt and seasoned pepper. Add beef and sausage; mix lightly but thoroughly. Shape into a loaf; transfer to slow cooker. Combine sauce ingredients; pour over top., Cook, covered, on low until a thermometer inserted into meat loaf reads at least 160° and potatoes are tender, 6 to 6-1/2 hours. Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8 1/2 x 4 1/2 inch loaf pan.
- Combine milk and soft bread crumbs in a small bowl and allow to soften, about 5 minutes.
- In a mixing bowl, combine the ground beef, salt, pepper, egg, 3 tablespoons steak sauce, chopped onion, and green bell pepper. Add bread crumb mixture, and mix with your hands until all ingredients are combined.
- Pat the the mixture into the prepared loaf pan. Brush the top with additional steak sauce.
- Bake in the preheated oven for 1 hour or until done. Allow to stand 5 minutes before slicing.

- Preheat the oven to 425 degrees.
- Put the beef in a mixing bowl and set aside.
- Heat the butter in a saucepan and add the onions, green peppers and mushrooms. Cook, stirring, until the vegetable mixture is wilted. Continue cooking until any liquid evaporates. Let it stand until cool.
- Add the cooked vegetable mixture and parsley to the meat. Add salt, pepper, the bread crumbs, allspice and egg. Blend well with the hands.
- Pack the mixture into a seven- cup loaf pan and smooth over the top. Place in the oven and bake one hour. Remove from the oven and let stand 20 minutes.
- Unmold and serve sliced. Serve the tomato sauce with horseradish on the side.

GREEN PEPPER MEATLOAF
I got this recipe from "Leftovers Makeovers" This Meat Loaf is Meal number one, then you can use the leftovers to make Recipe #237966 the next night or Recipe #237930 the next if you have enough left over. Here at my DD's I might get enough left over to make one or the other but never both. The kids love this meatloaf, and it is one I appreciate since there is no tomato in it so I can enjoy it without suffering later.

- In a large bowl, combine eggs, green peppers, onion, celery leaves, parsley and soup mix. Crumble beef and sausage over the mixture and mix well. Shape into a 12 inch x 4 inch loaf. Place on a rack in a shallow baking pan.
- Back, uncovered, at 350°F for 1 hour. Place bacon strips over top if desired. Bake 45 - 69 minutes longer or until no pink remains and a meat thermometer reads 160°F.
- Enjoy this for a winter meal, and be prepared to use up the left overs later. If you want dice up the left over meat loaf, add some cooked elbow macaroni, and your favorite bottled or canned spaghetti sauce, heat a bit, serve with a green salad and you have one quick work-night meal with out much added cost.
