Jerk Cornish Hens image

Steps:

  • Combine the scallions, bell pepper, olive oil, lime juice, garlic, thyme, allspice, ginger, brown sugar, chile pepper and 1 tablespoon salt in a food processor; pulse to make a thick sauce. Refrigerate 1/4 cup for serving.
  • Season the hens all over with salt and pepper; poke a few holes into the bone side. Rub 1 cup of the jerk sauce all over the hens in a large bowl or pan. Cover and refrigerate for 2 to 4 hours.
  • Preheat a grill to medium; prepare for direct and indirect grilling: On a charcoal grill, bank the coals on one side. For a gas grill, turn off one of the burners after preheating. Remove the hens from the marinade, letting any excess drip off; place skin-side up on the cooler side of the grill (position the legs closer to the fire). Cover and cook until the hens are golden brown, about 15 minutes.
  • Baste the hens with any extra jerk sauce, then turn them over to the direct-heat side of the grill; cook, uncovered, until the skin is dark brown and the meat is cooked through but still moist, 5 to 10 more minutes. (A thermometer inserted into the thickest part should read 160 degrees.) Set the hens aside for 5 minutes, then serve with the reserved jerk sauce.

Tuscan Grilled Cornish Hens image

Steps:

  • Sprinkle the Cornish hens with 1 teaspoon salt on each side.
  • Combine the olive oil, lemon zest, lemon juice, garlic, rosemary, and 1 teaspoon pepper in a ceramic or glass dish just large enough to hold the flattened hens. Add the hens, and turn to coat. Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight, turning once or twice.
  • When ready to grill, prepare a hot charcoal fire on one side of a grill (or turn a gas grill on low heat). Spread 1/4 of the coals across the other side of the grill. Place the hens on the cooler side skin-side up and weigh them down with a gratin dish with a foil-wrapped brick inside.
  • Cook for 12 minutes, until the underside is golden brown. Turn the hens skin-side down, weigh them down again, and cook for another 12 minutes until the skin is golden brown and the hens are cooked through.
  • Place the lemon halves on the cool side of the grill, cut-side down, for the last 10 minutes of cooking. Remove the Cornish hens and lemons to a plate or cutting board, cover with aluminum foil, and allow to rest for 5 minutes. Cut the hens in half, sprinkle with fleur de sel, and serve with the grilled lemon halves.

  • In a large, non-reactive bowl, mix onion, garlic, lemon juice, olive oil, white wine, Worcestershire sauce, hot pepper sauce, pepper, celery salt, and salt. Place Cornish game hens in the bowl, coating evenly with the marinade mixture. Cover, and marinate in the refrigerator at least 4 hours.
  • Preheat an outdoor grill for medium heat, and lightly oil grate.

  • 1. Attach birds to the spit.
  • 2. Melt butter, I use the defrost cycle of the microwave.
  • 3. Stir in your herbs, you can experiment and use any combo of things you like, I especially like garlic, sage, and parsley.
  • 4. Baste your birds generously with your compound butter and from time to time as they cook.
  • 5. I really didn't time these, but when they are good and golden they are usually ready, say 1 1/2 hours.

2 small cornish game hens, or other small fowl
3/4 stick butter
1 Tbsp minced garlic from jar
1 tsp fresh parsley (using dried use less)
10 medium freh sage leaves, fine chopped (using dried use less)

  • Place hens in a large resealable plastic bag. In a small bowl, combine the remaining ingredients. Pour half into bag; add the hens. Seal bag and turn to coat. Refrigerate for at least 1 hour. Cover and refrigerate remaining marinade. , Drain and discard marinade from hens. Place hens in a 13x9-in. disposable aluminum pan. Grilled Cornish Game Hens With Pesto image

Steps:

  • Cut off the wing tips of the Cornish hens.
  • Split open, cutting through the breast.
  • Split in half through the back by cutting on both sides of the backbone.
  • Using a small, sharp knife, remove the ribs and breastbone.
  • These bones are easily removed and doing so makes it much easier for the diner to enjoy.
  • Slip your fingers under the skin to separate it from the meat. Go in from the side which was next to the backbone. This is where the pesto stuffing goes. Set hen aside while preparing the pesto.
  • Give the garlic cloves a firm whack with the side of a knife to remove the skin.
  • Crush to release the oils then place in a food processor along with the parmesan cheese, pine nuts, basil leaves,parsley,salt and freshly ground pepper.
  • Process until finely ground.
  • Slowly add just enough olive oil to make the pesto pasty and moist, but not runny.
  • Place about 2 tablespoons of the stuffing under the skin of each half and evenly distribute it by applying gentle pressure to the skin.
  • Any remaining pesto can be placed in a covered container and refrigerated for several weeks. Because the parsley has been added it will retain its bright green color.
  • Sprinkle the skin with salt and freshly ground pepper.
  • Lightly drizzle with olive oil.
  • Cover with plastic wrap and refrigerate until ready to serve.
  • Close to serving time, place about six pieces of pecan or oak chips in water to soak.
  • Get a charcoal fire ready to grill on or turn on the gas grill if using that.
  • Place the wet wood chips on the coals/ burner to create flavorful smoke.
  • Grill the stuffed hens until richly browned on both sides, about 10-20 minutes in all, depending on size of hen.
  • Serve immediately.

This is a recipe I found in a magazine a few years back and it never disappoints! I usually use this for dinner parties because it can be prepared ahead of time and takes very little effort. This calls for Cornish Game Hens but I always use mixed pieces of chicken with the skin on! Just watch because the chicken breasts cook faster than the dark meat. I never alter the ingredients but I do marinate it for at least 4 hours or longer. I serve this with garlic-mashed potatoes and broccoli!! Oh- don't forget the last step with the reserve marinade!
