QUATTRO FORMAGGI GRILLED CHEESE SANDWICH

Take the cheese toastie to another level with this four-cheese grilled sandwich - a tasty mix of ricotta, parmesan, mozzarella and gorgonzola on white bread

Steps:

  • Mix the ricotta with the grated parmesan and mozzarella. Take 2 thick slices white bread and spread the cheese mixture over one of them. Top with the gorgonzola, broken into pieces, then close the sandwich with another slice of bread.
  • Spread the outsides of the sandwich, top and bottom, with the mayonnaise. Fry the sandwich in the butter for 3-4 mins each side, pressing the sandwich down gently with your spatula as it cooks to make sure it melts evenly inside and stays together.

Steps:

  • To prepare each sandwich, spread 1 teaspoon of the olive oil on one side of each slice of bread.
  • Place 2 slices cheese, three to four spinach leaves and 1 tablespoon cooked bacon between unbuttered sides of two bread slices.
  • Place one sandwich in a large frypan or on a griddle.
  • Cook over medium high heat for 3 to 4 minutes on eaach side or till the cheese is melted and the bread is golden brown.
  • If necessary to prevent overbrowning, reduce to medium or brush on extra margarine, butter or olive oil.
  • repeat for remaining sandwiches (if using thin focaccia, use two unsplit wedges to make each sandwich).
