Precooked sausage and prepared coleslaw mix make this a good 'n easy griller's treat.

Grilled Kielbasa and Cabbage image

Steps:

  • Heat coals or gas grill for direct heat.
  • Place sausage ring in 8-inch square aluminum foil pan. Mix coleslaw mix, bell pepper, celery seed, salt and pepper. Mound cabbage mixture in center of sausage ring. Dot with butter; sprinkle with water. Cover with aluminum foil, sealing edges securely.
  • Cover and grill pan 4 to 6 inches from medium heat 15 to 20 minutes or until coleslaw mixture is crisp-tender and sausage is hot.
  • Cut sausage into 4 pieces. Serve sausage and coleslaw mixture on buns.

These cabbage slices are charred and softened on the grill, then slathered in a vegan Caesar-style dressing. With a hint of nuttiness from tahini and lots of crunch from rustic croutons, the delicious result is a hearty dish somewhere between a wedge and Caesar salad.

Grilled Cabbage with Tahini Caesar Dressing image

Steps:

  • Prepare a grill or grill pan for high heat.
  • Brush the flat sides of the cabbage wedges with 1 tablespoon of the olive oil and season with 1 teaspoon salt and a few grinds of black pepper. Grill on one flat side, flipping halfway through to the other flat side, until dark grill marks have formed and the outer layers are softened, about 8 minutes. Transfer to a serving platter.
  • Brush the bread with 1 tablespoon olive oil and season with 1/2 teaspoon salt and a few grinds of black pepper. Grill the bread sliced-side down until grill marks form and the bread is toasted, 2 to 3 minutes. Let cool slightly, then tear into roughly 1/2-inch pieces.
  • Meanwhile, add the tahini, capers, tamari, agave, 2 tablespoons olive oil, half of the lemon zest and juice, 3 tablespoons water and a generous amount of black pepper to a medium bowl. Grate in 3 cloves of the garlic and whisk until well combined.
  • Grate the remaining clove of garlic into a medium bowl. Stir in the parsley, red pepper flakes, remaining lemon zest and juice and remaining 3 tablespoons olive oil.
  • Drizzle the cabbage with the dressing, top with the croutons and parsley mixture and serve immediately.

Grilled Chicken Sausage with Pears image

Steps:

  • Preheat grill to medium-high. (If you are using a charcoal grill, coals are ready when you can hold your hand 5 inches above grill for just 3 to 4 seconds.)
  • Whisk lemon juice with mustard. Add oil in a slow, steady stream, whisking until emulsified. Whisk in salt and pepper. Toss pears with 2 tablespoons dressing.
  • Grill sausages, turning frequently, until heated through, 10 to 12 minutes total. At the same time, grill pears until softened and lightly browned, 4 to 5 minutes per side. Top sausages and pears with thyme, and serve with chutney, mustards, and remaining dressing.

Steps:

  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Slice the sausage links in half lengthwise, then cut into 3-inch chunks.

  • Fill a large stockpot with salted water, and bring to a boil. Place cabbage in water. Reduce heat to medium, and cook until tender, about 25 minutes. Drain in a colander.

  • Cut off the bottom (root) end of the cabbage and place it on a cutting board sitting up so that the flat end is on the cutting board. Cut top to bottom into 3/4- to 1-inch thick slices. Place on the prepared baking sheet. If you have more slices than fit on your baking sheet without touching, divide them between two baking sheets.
  • In a small bowl, whisk together the olive oil, garlic, salt, and pepper. Brush over one side of the cabbage, then flip the cabbage over and brush the other side. Roast the cabbage for 26 to 28 minutes, or until crispy at the edges and tender in the center.
