CHEESY HAM & POTATO PACKET
I found the technique for grilling ham, potatoes and cheese in foil and changed the recipe for our tastes. It's a dandy way to use leftover ham. -Molly Bishop, McClure, Pennsylvania

Steps:
- In a large bowl, toss potatoes with green pepper, onion and pepper; place in center of a greased 24x18-in. piece of heavy-duty foil. Fold foil around vegetables and crimp edges to seal., Grill, covered, over medium heat 15-20 minutes or until potatoes are tender. Remove from grill. Open foil carefully to allow steam to escape. Add ham; sprinkle with cheese. Grill opened packet, covered, 2-4 minutes longer or until cheese is melted.

GRILLED CHEESY HAM SUPPER FOIL PACKS
Want to beat the heat in the kitchen? Fold up these quick ham-broccoli-and-potato packets and cook them outside on the grill for an easy summer supper with no cleanup.

- Heat gas or charcoal grill. Cut 4 (18x12-inch) sheets of heavy-duty foil. Place ham piece in center of each. Top each evenly with potatoes and vegetable mixture. Bring up foil sides so edges meet. Seal edges, making tight 1/2-inch fold; fold again, allowing space on sides for heat circulation and expansion.
- Place packets, seam side up, on grill. Cover grill; cook over medium heat 18 to 23 minutes, rearranging packets several times during cooking, until potatoes and vegetables are tender.
- To serve, carefully open packets to allow steam to escape. Sprinkle each with cheese; close packets and let stand until cheese is melted, 1 to 2 minutes.

- Preheat grill for medium heat. Spray a 24-inch piece of aluminum foil with cooking spray.
- Place potatoes on the prepared piece of aluminum foil; spray with cooking spray.
- Mix bread crumbs, Parmesan cheese, seasoned salt, and pepper together in a bowl; sprinkle over potatoes. Fold aluminum foil over potato mixture and seal edges together.
- Cook on the grill until potatoes are tender, 20 to 30 minutes.

- In large bowl, mix melted butter, mustard, salt and pepper. Add potatoes and ham; stir until evenly coated. Divide mixture among sheets of foil.
- Bring up 2 sides of foil so edges meet. Seal edges, making tight 1/2-inch fold; fold again, allowing space for heat circulation and expansion. Fold other sides to seal.
- Place packs on grill over medium heat. Cover grill; cook 12 minutes. Rotate packs 1/2 turn; cook 8 to 10 minutes longer or until potatoes are tender. Remove packs from grill; cut large X across top of each pack. Carefully fold back foil; sprinkle potatoes with cheese. Loosely close; let stand 3 to 5 minutes or until cheese is melted. Garnish with chives.
