GRILLED PORK-AND-PINEAPPLE TACOS

Our at-home version of the Mexican classic tacos al pastor pairs spicy pork tenderloin with sweet pineapple on the grill.

Grilled Pork-and-Pineapple Tacos image

Steps:

  • Preheat grill to medium-high. Stir together chili powder, 2 teaspoons salt, and 1/2 teaspoon pepper; sprinkle evenly over pork. Let stand 10 minutes.
  • Brush grill grates with oil. Grill pork, turning a few times, until charred in places and a thermometer inserted into thickest part registers 140 degrees, 12 to 15 minutes. Transfer to a cutting board. Grill pineapple and onion, flipping once, until charred in places and crisp-tender, 6 to 8 minutes. Transfer to board with pork. Grill tortillas, flipping once, until hot and blistered in places, 30 to 45 seconds each, placing them inside a folded kitchen towel as you go. Let steam a few minutes to soften.
  • Thinly slice pork and cut pineapple into 1/2-inch-thick pieces; slice onion. Fill warm tortillas with pork, pineapple, onion, salsa, cabbage, and cilantro; serve.

Steps:

  • In a large bowl, toss pork with 2 tablespoons lime juice and seasonings; let stand 5 minutes. Meanwhile, in a small bowl, mix beans, pineapple with reserved juice, onion, cilantro and remaining lime juice., Thread pork onto four metal or soaked wooden skewers. Moisten a paper towel with cooking oil; using long-handled tongs, rub on grill rack to coat lightly. Grill kabobs, covered, over medium heat 6-8 minutes or until tender, turning occasionally., Remove pork from skewers; serve in tortillas. Top with bean mixture and, if desired, sour cream.

Grilled Pork Tacos al Pastor image

Steps:

  • In a blender, combine achiote, chiles and sauce, 1/4 cup oil, and 3/4 cup water; blend until smooth, about 5 seconds. Use one-third the marinade to coat pork all over (refrigerate or freeze remaining marinade to use on other meat or fish). Cover pork and refrigerate 1 hour.
  • Set up a grill for indirect cooking over medium-high. Clean and lightly oil hot grill. Brush onion slices with oil and season with salt. Arrange in a single layer over hot side of grill. Cook until grill marks are dark brown on both sides, 3 to 5 minutes per side, flipping once. Move to cool side of grill and cook until soft, 5 to 8 minutes. Repeat with pineapple. In batches, grill pork over direct heat, about 1 minute per side.
  • Transfer pork to a cutting board; chop into 1/4- to 1/2-inch pieces. Add to a skillet set on grill to keep warm. Chop onion and pineapple into small pieces, add to skillet, and toss. Season with salt. Serve pork mixture with tortillas and salsa.

Grilled Chipotle Pork Tacos with Red Slaw and Brown Sugar Pineapple image

Steps:

  • For the pork: Combine the cilantro, lime juice, oil, chile powder, garlic and onions in a large dish. Add the pork slices and turn to coat. Preheat a grill on medium-high heat.
  • For the red slaw: Combine the cabbage, cilantro, oil, vinegar, chile powder, bell peppers, red onions and 1/4 teaspoon each salt and pepper in a large bowl. Toss to mix and set aside.
  • Remove the pork from the marinade and discard the remaining marinade. Sprinkle the pork on both sides with 1/4 teaspoon each salt and pepper. Grill, turning once, until browned and still a little rosy inside, about 10 minutes. Transfer to a large plate.
  • Grill the tortillas, turning once, until grill marks appear and the tortillas are softened, about 1 minute. Transfer two tortillas per plate. Divide the pork and a little slaw among the tortillas. Serve with lime wedges.
  • Evenly divide the pineapple among four bowls, top each with 1/4 cup sour cream, 1/2 tablespoon sugar and a sprinkle of cinnamon. Serve with the pork tacos.

  • Place sliced pork on a large rimmed pan. Brush both sides of each pork slice very lightly with olive oil and set aside.
  • In a small bowl, whisk together the cumin, ancho chili powder, chipotle chili powder, garlic powder, oregano, onion powder, black pepper, salt, and cloves. Sprinkle spice mixture evenly onto both sides of each piece of pork, using all of the spice mixture.
  • Place pineapple spears on a separate rimmed pan, along with the onion slices. Brush both sides of the onion slices very lightly with olive oil and then sprinkle fairly generously with black pepper and salt.
  • Heat grill to medium-high heat. Make sure grates are scrubbed clean and then oiled. (To oil the grates, add some canola oil to a small bowl. Then fold a heavy paper towel a few times to make a smaller square. With a tongs, grasp the folded paper towel and dip it into the oil until the paper towel is drenched. Then run the paper towel over the grates, repeating until all grill grates are thoroughly oiled.)

  • In a large bowl, toss the pork with the garlic, chili powder, salt, pepper and cumin. Let stand for 5 minutes. Thinly slice half of the onion, add it to the bowl with the vinegar and any reserved pineapple juice and toss with the pork. Marinate for 1 hour at room temperature (or slightly longer in the refrigerator). If chilled, bring to room temperature before grilling.
  • Preheat the grill or broiler. Thread pork and pineapple chunks alternately onto 8 skewers. Discard the marinade. Grill the kebobs or broil 4-inches from heat for 2 minutes per side. (8 minutes total), or until the pork is no longer pink in the center. Transfer to a platter.
  • While the pork is cooking, finely chop the remaining half of the onion. Place onions, cabbage, cilantro and salsa into individual serving bowls. Place all of the tortillas in a paper towel that has been sprinkles with a few tablespoons of water. Heat on half-heat for about 2½ minutes in the microwave. See Notes below if you'd like to deep-fry the tortillas instead. Keep wrapped and place in basket. Serve tacos immediately with fixings.
