EASY GRILLED QUAIL
If you are looking for something different to grill this summer, how about quail? You can keep things simple and pair them with everyday sides or dress them up for company by serving them with couscous and shredded Brussels sprouts. Wild rice pairs nicely with them as well.

Steps:
- Preheat an outdoor grill for medium heat and lightly oil the grate.
- Combine parsley, paprika, garlic powder, salt, and pepper in a bowl. Add olive oil and stir until evenly combined. Brush seasoned oil over both sides of the quail.
- Grill for 8 minutes. Carefully flip with tongs and grill for 8 minutes more.

GRILLED QUAIL
Steps:
- In a medium bowl, combine the garlic, shallots, thyme, oil, and pepper. Add the quail and marinate in the refrigerator for 6 to 8 hours.
- Preheat an outdoor grill to medium-high heat.
- Place the marinated quail on the grill and cook for 6 to 8 minutes per side. Brush the quail with Maple Bacon Vinaigrette and grill for 2 more minutes. Place each quail on 1 ounce of arugula.
- In a skillet over medium heat, cook the bacon until the fat is rendered and the bacon is crisp. Remove the bacon and set aside. In a food processor, combine the bacon fat, Dijon mustard, whole-grain mustard, syrup, vinegar, shallot, and garlic. Mix well and slowly drizzle in the oil. Season with salt and pepper. Stir in bacon pieces.
BOUDIN-STUFFED QUAIL WITH CRANBERRY-BOURBON SAUCE
Steps:
- Heat 2 tablespoons canola oil in a Dutch oven over medium-high heat. Add the ground pork and chicken liver and cook, stirring occasionally, until browned, about 10 minutes. Add the onion, bell pepper, celery and garlic, and continue to saute for 5 minutes.
- Bring 2 cups water and a pinch of salt to a boil in a small saucepan. Add rice, cover, and bring back to a boil. Reduce to a simmer and cook for 20 minutes.
- In a small saucepan, combine the cranberries, bourbon and sugar in pan. Bring to a boil and cook, uncovered, over medium heat until the berries are soft and the sugar is dissolved, about 20 minutes. Remove from the heat and let cool bit, then pour into a blender and puree until smooth.
- Heat a cast-iron skillet over medium-high heat. Sprinkle the quail with salt, pepper, cayenne, chili powder and smoked paprika. Swirl some canola oil in the skillet and then add the quail. Cook on one side for about 5 minutes; flip and cook for another 5 minutes-the quail won't be fully cooked yet, but that's okay. Set aside.
- Mix the cooked rice into the ground pork mixture and season with salt, pepper and cayenne¿now you have boudin.
- Preheat the oven to 350 degrees F.
- Stuff each quail with boudin and place back in the cast-iron skillet. Roast until cooked through, 10 to 15 minutes.
- Serve the stuffed quail atop cranberry-bourbon sauce.
GRILLED QUAIL WITH BRIOCHE, FOIE GRAS, AND ROSE GERANIUM SAUCE

- Marinate the quail in olive oil, thyme, and sage for at least 2 hours, up to overnight, in the refrigerator.
- Preheat a grill. Preheat the oven to 400 degrees F.
- Remove the quail from the marinade and season with salt and pepper. Place the quail, breast-side-up, on a medium hot grill. Cook for 3 minutes, then turn over so the breast-side is down, and cook for 2 minutes. Then lift and adjust position on the grill to create an "x" mark on the breast. Finish cooking for about 4 minutes, about 8 to 9 minutes total cooking time.
- While the quail are cooking, sear the foie gras in a dry, medium-hot pan. Place in the oven for 4 minutes. Remove from the oven, place the foie gras on a cutting board and slice into 8 pieces. Lightly toast the brioche, place a piece of foie gras on each half and a quail on top. Spoon the sauce over the quail and garnish with Sweet Potato Shoestrings.
- Place the shallots, wine, and vinegar in a small pot. Bring to a boil, the reduce the heat and simmer until reduced by half. Add the stock and continue to reduce until you have about 1/2 cup of liquid left. Whisk in the jelly, then add the butter and season, to taste. The sauce should be glossy and syrupy, but not too sweet. Add a drop of vinegar, to balance, if necessary. Set aside and keep warm.
- Bake the sweet potatoes until very soft. Let cool. Peel and weigh out 12 ounces. Put the sweet potatoes in the bowl of an electric mixer. Using a paddle, mix for 2 minutes on medium speed or until mashed. Then add egg, milk, and yeast and mix for 1 minute. Add the rest of the dry ingredients and mix for 6 minutes on medium speed. Let rest for 15 minutes.
- Preheat the oven to 325 degrees F. Add the cold butter in stages on speed 2. Mix for 6 to 8 minutes to smooth out the brioche, until it does not stick to the sides of the bowl. Divide into 2-ounce balls and place in muffin tins or brioche molds. Let rest in a warm place for 1 1/2 hours. Brush with egg wash and bake until golden brown, about 10 minutes.
- Preheat a fryer to 325 degrees F. Add the potatoes and fry until crispy. Drain on paper towels and season with salt.
GRILLED TEXAS QUAIL
Steps:
- Marinate the quail in olive oil, garlic and fresh herbs in the refrigerator overnight.
- Remove from the refrigerator and sprinkle Creole seasoning blend on both sides. Grill on high heat over mesquite wood until done (about 4 to 5 minutes per side).
CRISPY SMOKED QUAIL SALAD WITH BOURBON-MOLASSES DRESSING
This rich and smoky salad has become, hands down, the most popular dish on the menu at Bayona. I think it's owing to the combination of textures and flavors, and the way they all mingle together and complement one another. There are several components to this salad, and that's why it's so satisfying. The good news is that many of these steps can be done in advance. The trickiest technique is cold-smoking the quail, which infuses it with natural smoky flavor without cooking it. That means when we fry the batter-dipped bird at the last minute, the result is both crispy and juicy. At the restaurant we make a stock with the smoked quail wings and use it to enrich the dressing, but this is not necessary. If pears are not in season, apples make a good substitute.

- Whisk together the honey, ketjap manis, and oil in a medium bowl. Nestle the quail in the marinade, ensuring that each inside cavity is moistened, and refrigerate for at least 1 hour. Drain the quail and cold-smoke (see below) for about 15 minutes. The quail should not cook in the process.
- Whisk together the molasses, vinegars, and shallot in a small bowl. Whisk in the olive oil, season with salt and pepper, and stir in the bourbon.
- Whisk the ingredients together in a small bowl and set aside. The batter should be the consistency of whipping cream in order to lightly coat the quail.
- Heat 2 1/2 inches of the frying oil in a deep skillet (large enough to hold the quail in a single layer) to about 350°F. Dip the quail in the batter. Lift them out of the batter and hold over the container, letting the excess drip off. Fry the quail for about 4 minutes, turning once. Drain them on paper towels, cool slightly, and cut into quarters (2 legs and 2 breasts).
- Place 4 pear wedges on each of four plates. Toss the greens with a few spoonfuls of dressing and the celery hearts and pickled onions, and divide among the plates. Top the salads with the quail and sprinkle with spiced pecans. Drizzle with more dressing, if desired.
- Cold smoking allows you to cool the smoke before it reaches the food (so the food absorbs flavor without cooking. To cold-smoke, open the vents on both the bottom of the grill and the lid. Remove the lid and top rack from the grill, and center a disposable roasting pan on the coals. Place 1 1/2 cups of sawdust in the pan. Fill the drip pan between the grill and the hot coals with an aluminum or metal tub of ice. Cover the grill and smoke for 15 minutes.
GRILLED MARINATED QUAIL

- Wash and dry quail.
- Combine remaining ingredients and place in noncorrosive container large enough to hold quail. Place quail in marinade, turning to coat both sides. Cover. Refrigerate for at least 2 hours, or overnight, turning occasionally.
- To cook, heat broiler(s). Cover broiler pan with 2 layers of aluminum foil and arrange quail on foil. If you have only one broiler, you will have to cook the quail in 2 batches. Broil 2 inches from source of heat for 5 minutes on each side. Remove metal frame holding quail open and serve with polenta (see recipe).

GRILLED QUAIL, TUSCAN-STYLE

- Start wood or charcoal fire or preheat gas grill or broiler.
- Cut along each side of the breastbone of each bird, then straight down through where thigh meets body to get 2 semi-boneless halves from each bird. (Don't worry if skin holding thigh and drumstick together separates.) Combine with all other ingredients in bowl or heavy plastic bag and stir or shake to coat. If time allows, marinate for an hour or so.
- Grill quail, turning as needed, until browned and cooked through, about 15 minutes. Serve hot or at room temperature.
