These salmon patties are delicious for lunch or dinner.

Salmon Patties I image

Steps:

  • Drain and reserve liquid from salmon. Mix egg, onion, bread crumbs and salmon together.
  • Make into patties. If mixture is too dry to form into patties, add reserved liquid from salmon.
  • In a frying pan, heat olive oil. Place patties in pan. Brown on each side, turning gently. Drain on paper towels and serve.

A fast, four-ingredient tartar sauce tastefully tops grilled salmon patties.

Tartar-Topped Grilled Salmon Burgers image

Steps:

  • In small bowl, mix salmon, bread crumbs and bell pepper, breaking up salmon with spoon. Stir in remaining burger ingredients until well mixed.
  • Line cookie sheet with waxed paper. Shape salmon mixture into 4 patties, each about 1/2 inch thick. Place on waxed paper. Refrigerate 1 hour. Meanwhile, in small bowl, mix all tartar sauce ingredients. Refrigerate until ready to serve.
  • Spray grill rack with cooking spray. Heat gas or charcoal grill. Cover and grill burgers over medium heat 6 to 8 minutes, turning once, until heated through. Serve with tartar sauce.

  • Place the salmon in a cutting board and cut crosswise into very thin, ¼-inch strips. Now, take a second pass at cutting, going over the pieces in the opposite direction so that you cut the strips into a dice. Continue cutting the salmon until the pieces are very small, about 1/8- to 1/4-inch each. (Be patient. Moist, tender patties will be your reward.)
  • Transfer the salmon to a large mixing bowl. Add the herbs, Greek yogurt, lemon juice, salt, ginger, and black pepper. With a fork, mix to combine.
  • Divide the mixture into 4 equal portions. With your hands, compact each portion into a patty that is about 1-inch thick. They might not hold together at first, but keep squeezing. Place the patties on a parchment-lined baking sheet or large plate. Refrigerate for at least 15 minutes or cover with plastic and refrigerate for up to 1 day.
  • While the burgers chill, prepare the sauce: In a medium bowl, whisk together the Greek yogurt, vinegar, herbs, garlic powder, and salt. Refrigerate until you are ready to serve.
