Grilled Snow Crab W/Shrimp, Scallops and Crawfish image

Steps:

  • You will also need two 8" foil pans.
  • Crab butter (x2): 1.5 sticks butter (softened), 1tbsp Old Bay, 1tsp Olive oil, 1tsp Garlic juice (from the jar). Blend all together. One for basting the crab, one for dipping.
  • As with most outstanding dishes, the preparation is key to developing the flavors. This is how I prep these dishes and the family loves the results. Due to my location, all of these ingredients are frozen from the store. Fresh is always best, but you make do with what you can get your hands on.
  • Snow crab: To thaw these I use a large roasting pan and add sea salt (2 tbsp), lemon juice (1/4 C), and garlic juice (2 tbsp) to the water (just enough to cover most of the crab) and place in fridge overnight. About 4 hrs before cook time, drain the crab legs and pat dry with paper towels. Brush crab butter liberally all over the clusters and return to roaster, cover and refrigerate.
  • Shrimp and Scallops: To thaw I use a large bowl to combine these and use the same set up as with the crab legs, just adjust the salt/lemon juice/garlic accordingly to the smaller amount of water used. After finishing the snow crab prep, prep your shrimp and scallops-rinse/drain well, back in the bowl and sprinkle 1.5-2 tbsp Tony Chachere over the shrimp and scallops while gently mixing to get a good coverage on all. Cover and back in fridge.
  • Crawfish: Since I have to buy these frozen (pre-cooked) to thaw I use the same as the shrimp and scallops, prep is the same also except use the Slap Ya Mama (mudbugs gotta have heat!).
  • Prep your grill for around 350 degrees (med to med high) but no hotter than 360. Set up with 3/4 of surface direct heat and 1/4 indirect. I am a charcoal guy so this prep time gives me about 20min to get the rest of my prep stuff done. You gassers will have to adjust accordingly....
  • Final prep for shrimp, scallops and crawfish: Take the two 8" foil pans and add ½ stick of butter (softened), 1tsp lemon juice, and 1tsp minced garlic to each. One pan is for the shrimp and scallops and one is for the crawfish. Done worry about melting the butter and mixing all the ingredients for now.
  • Shrimp and scallop pan: also add rosemary and 1tsp Tony Chachere, add shrimp and scallops to pan.
  • Crawfish pan: add 1tbsp Slap Ya Mama then add crawfish.
  • Place uncovered pans on your grill, directly over coals and close the lid. Give it about 4-5 minutes (no peeking!). By this time your butter should be bubbling, if not close lid and wait a couple more minutes. Once your butter is bubbling in both pans, gently stir both pans and tightly cover/seal with foil (this really gets the butter/seasonings cooked in). If you have a larger grill, place both pans on the indirect heat area. If you do not have a large enough grill, then place pans in a pre-heated oven (300 degrees).
  • Grab your crab legs, left over crab butter, long handled baster brush, and tongs: the size of your direct heat cooking area will determine how many clusters you cook at once. (Be sure to have a serving dish handy to transfer cooked legs onto so that you can keep cooking. I place my serving dish on top of the 2 foil pans so everything stays hot. Another covered roasting pan on the side will work as well.) I cook my crab legs 3 clusters at a time for about 2-3 min per side (pale underside will brown and top sides will deepen red). 3 clusters provides adequate space for the clusters to be spread out and cook evenly. Don't pile the clusters on top of each other, this will cause uneven cooking. Back to the grilling: add your clusters and close the lid immediately, this will minimize the flaring up as the butter melts. 2-3 minutes and then flip the clusters and baste with crab butter; close lid immediately. 2-3 minutes and place in serving dish, brush with crab butter and repeat with next set of clusters. Watch your time as it is very easy to overcook the crab which will dry out the meat.
  • Remove all from the grill, transfer shrimp/scallops and crawfish into serving bowls, serve immediately and enjoy!

15 -20 crawfish
2 cups butter (sticks are easier to use)
2 tablespoons Old Bay Seasoning

3 tablespoons slap ya mama hot cajun seasoning
2 teaspoons olive oil
1/3 cup lemon juice
minced garlic (store bought jar)
3 tablespoons sea salt
1 tablespoon finely chopped fresh rosemary

SEAFOOD TRIO W/SHRIMP, SCALLOPS AND CRAB

This is my re-creation of a fabulous dish of shrimp, scallops and crab that I enjoyed in Northern California almost 40 years ago. It made such an impression on me that I've tried to find someone... anyone... who served it ever since, but with no success. Now, here is my own version that I believe captures the original qualities I've tried so many years to find. A very nice factor with this recipe is you don't need fresh seafood to make it. We live 45 miles from the nearest fresh fish market, so we've learned to not depend on fresh fish for the success of our recipes. If you have access to fresh shellfish for this recipe, it will be even better, but if you need to use IQF seafood, the recipe will work perfectly well if you simply allow your shellfish to thaw gently, either in cold running water, or overnight in the refrigerator. The sauce is not heavy but still rather rich, and will actually thin some as it cooks because the shellfish will give up some of its moisture.

Seafood Trio W/Shrimp, Scallops and Crab image

Steps:

  • Preheat oven to 350 degrees F.
  • Heat olive oil in heavy-bottomed sauce pan over medium-low heat.
  • Add scallion and a good pinch of salt. Cook about 5 minutes, stirring frequently. Do not allow to brown.
  • Add flour and stir until all oil is absorbed, forming a heavy paste.
  • Cook paste (this is a white roux with scallions in it at this stage) for about 2 minutes, stirring constantly to avoid browning.
  • Add 1/2 of the clam juice, stirring well to incorporate and avoid lumping.
  • Add 1/2 of the clam juice, repeating the process.
  • Stir in the wine.
  • Stir in the cream.
  • Add cayenne and white pepper.
  • Bring sauce to a very low simmer. Taste sauce and adjust salt to taste. (I usually add about 1/2 tsp, but salt varies so sneak up on it rather than use more than you like.).
  • Test the thickness by dipping a spoon into the sauce and letting it run off. It should be just thick enough to coat and cling to the back of the spoon -- this is called "nappe" (pronounced "na-pay" by my culinary instructor but my college French professor would have said "nap",) in classical cooking. If it is too thick, add a bit more clam juice or cream until you get the desired thickness, and reheat to a very low simmer.
  • Add parsley and stir to incorporate.
  • Preheat 2 oval ramekins (we use about a 4"x6" size, but any oval large enough to contain 12 oz of seafood will work) by running them under hot water.
  • Place 1/2 of shrimp in one end of each ramekin. Place 1/2 of crab in opposite end of each ramekin. Place 1/2 of scallops in the center of each ramekin. (Yes, you want the seafood separated into neat little sections. It works. Trust me.).
  • Pour 1/2 of the sauce evenly over the contents of each ramekin. Don't worry if the sauce wants to stick on the top -- it will run down into the seafood as the "casserole" bakes.
  • If desired, you can put a thin layer of panko to the top of each ramekin. (This is not how the original was done, but my sister likes a bit of contrast in her textures so I do this when I'm cooking for her as well, and it certainly doesn't hurt anything.).
  • Bake for 20 minutes, or until the top begins to show signs of browning. If there is no sign of browning after 20 minutes, raise the shelf and turn your oven to broil. Broil for no more than 5 minutes! This depends on your oven, and if you cook the seafood too long, you will get rubbery seafood.
  • Remove from oven and allow to rest for 5 minutes before serving.

8 ounces bay shrimp (100 count or smaller)
8 ounces bay scallops (60-80 count... the small, bite-sized ones, not the big guys)
8 ounces lump crabmeat (Dungeness is my favorite and was used in the original, but your region may have something you prefer)
4 scallions, sliced very thin (use all the white and as much of the green as you like)
1 1/2 tablespoons olive oil
3 tablespoons Wondra Flour (or you may substitute AP flour)
1 cup clam juice (available in bottles or cans near the canned tuna in most stores)
2 tablespoons dry white wine
2 tablespoons cream
sea salt, to taste (kosher can be used)
1 smidgen cayenne (that's about half a pinch)
1 pinch white pepper
1 tablespoon flat leaf parsley, minced
1/4 cup panko breadcrumbs (optional) or 1/4 cup Italian seasoned breadcrumbs (optional)

  • Pour 1/3 of marinade into bowl with seafood and chill in fridge for 2 hours.

  • Heat coals or gas grill for direct heat.
  • Mix lemon juice, oil, thyme, salt and pepper. Cut scallops in half if over 1 inch in diameter.

Boiled Alaskan Snow Crab image

Steps:

  • You will also need: Big pot with water.
  • Season the water with a couple dashes of garlic salt, some fresh ground pepper to taste, and about 1/2-1 cup of old bay.
  • Remember these are outside shells and you're trying to penetrate flavor to the inside, although if you buy the good legs they should be slit (at least the claws) for easy access.
  • Then squeeze all the lemons into the water and throw them into the pot, too.
  • Then put the legs into the water.
  • The water should boil, watch it to make sure it doesn't boil over and make a big mess!
  • It should take at least 15 minutes to come to a boil, let boil for 4-5 more minutes so they can get a nice flavor in them.
  • Dump in sink in colander, and let cool for a couple minutes.
  • If you think it might be too spicy for ya then rinse it off a little bit.
  • Meanwhile heat you up some butter, maybe 1/2 stick in microwave, in a couple small bowls and squeeze some lemon in it.
  • Perfect for dipping the crab in!
  • But only if ya like lemon--if not just heat up the butter to dip the crab into.
  • Enjoy!
