- Preheat the broiler. Mist a foil-lined broiler pan with cooking spray. Put the mushrooms gill-side down on the pan; broil 5 minutes.
- Meanwhile, toss the spinach, breadcrumbs, mozzarella, chopped shallot, tomato, 2 tablespoons each pecorino and olive oil, 1/2 teaspoon salt, and pepper to taste in a medium bowl.
- Remove the mushrooms from the broiler and turn them gill-side up on the pan. Season with salt and pepper. Mound the spinach filling on the mushrooms and top with the ricotta. Sprinkle with the remaining 1 tablespoon pecorino and broil until the filling is heated through and the ricotta is lightly browned, about 5 minutes.
- Meanwhile, toss the celery, sliced shallot and the remaining 1 tablespoon olive oil in a bowl and season with salt and pepper. Top with shaved pecorino. Divide the mushrooms among plates and serve with the celery salad. Drizzle with olive oil.

- Remove stems from mushrooms and finely chop stems.
- Heat olive oil in a skillet over medium heat; cook and stir chopped mushroom stems, shallot, and garlic until softened, about 5 minutes. Pour wine into the skillet; cook and stir mixture using a wooden spoon until liquid is evaporated, 1 to 2 minutes. Cool mixture to room temperature, about 10 minutes.
- Preheat an outdoor grill for medium heat and lightly oil the grate.
- Brush the olive oil mixture over the top each mushroom and place, top-side up, on a grilling pan. Mix pesto and pine nuts with the mushroom stem mixture together in a bowl; spoon into each mushroom. Sprinkle Italian cheese blend over the filling.
- Grill mushrooms on the preheated grill until edges are blackened and stuffing is bubbling, about 10 minutes.

- In a small bowl, combine the oil, vinegar, garlic, salt and herbs. Pour half of the marinade into a large resealable plastic bag. Add mushrooms; seal bag and turn to coat. Pour remaining marinade into another large resealable plastic bag. Add remaining vegetables; seal bag and turn to coat. Refrigerate for at least 1 hour., Drain vegetables and discard marinade. - For the mushrooms: In a large bowl or a ziptop bag, whisk the olive oil, Worcestershire sauce, salt, pepper, garlic powder and lemon juice. Add the mushrooms and toss to combine. Marinate for 30 minutes to 1 hour.
- For the onions: While the mushrooms marinate, make the onions. In a large skillet over medium high, heat the olive oil. Add the onions and saute until beginning to get tender, about 5 minutes. Season with salt and pepper. Reduce the heat to low. Cook, stirring occasionally, until the onions become a deep brown caramelized color, about 20 minutes. If they start to look dry or stick to the pan, add a tablespoon or 2 of water.
- For the blue cheese spread: In a small bowl, mix the blue cheese and mayonnaise.
- Heat a grill pan over medium-high heat.
- Remove the mushrooms from the marinade and transfer to the grill pan. Cook until slightly wilted, browned and showing grill marks, 2 to 3 minutes per side.
- For the sandwiches: Put the hoagie rolls on the grill pan until lightly toasted. Spread one side of each roll with the blue cheese spread. Top with some mushrooms, caramelized onions and arugula. Drizzle lightly with balsamic vinegar and a sprinkle of salt.

- Prepare the barbecue (medium-high heat).

GRILLED TOMATO, ONION AND BLUE CHEESE STUFFED PORTABELLOS
Not sure how this started ... I was trying to use up vegetables in the fridge and made this. Since then anytime I make steak for a dinner party I always get asked to make them. I am sure there are other versions of this, but this is so good and easy. These can be grilled outside which is my method, but this works well with a grill pan and even baked in the oven. Don't be intimidated that you can outside grill. Most grilled recipes can be done inside and even in the oven. It may not have the charcoal flavor but the texture will be close.

- Mushrooms -- Remove the stem and lightly brush out the inside of the mushroom caps and clean off the mushrooms with a damp towel.
- Filling -- Chop the onions, tomato and toss with the olive oil, salt, pepper and parsley and fill the mushroom caps.
- Topping -- Mix the blue cheese and the bread crumbs and top the tomato onion mixture.
- Grill -- on indirect heat for about 20 minutes until the mushroom is soft and the cheese is melted. Or you can bake for 20 minutes again on 400 degrees, middle rack. I have also done this on a grill pan, but you do need to cover with a lid from a pot or pan just so the cheese will melt. It also takes around 20 minutes on medium heat. Just enjoy!
- Great served with steak, pork chops, chicken breasts, anything. Serve with a side salad for a great vegetarian dinner. You can slice them for smaller portions or serve a whole mushroom per person.
