GRILLED WHITE CHICKEN PIZZA WITH CARMELIZED ONIONS

I found this recipe on the Betty Crocker site and it's quickly become one of our favorites.

Grilled White Chicken Pizza with Carmelized Onions image

Steps:

  • 1. In 10-inch skillet, melt butter over medium heat. Cook onions and sugar in butter 20 to 25 minutes, stirring frequently, until deep golden brown and caramelized; stir in thyme leaves.
  • 2. Heat gas or charcoal grill. Spread cream cheese evenly over pizza crust. Top with Alfredo sauce, shredded chicken and onions, in that order.
  • 3. Place on grill over medium-low heat. Cover grill; cook 8 to 10 minutes or until hot. Avoid the temptation to grill the pizza at a higher grill temperature. The crust will burn before the toppings heat through. NOTE: When it's not nice enough to grill outdoors, I put the pizza on a pizza stone and stick it in a 450 degree oven for 8-10 minutes.
  • 4. For extra flavor, substitute garlic-and-herbs spreadable cheese for the cream cheese.

2 Tbsp butter or margarine
3 c halved, thinly sliced sweet onions (i use vidalia)
1 tsp sugar
1 tsp fresh thyme (less if using dried)
2 oz cream cheese
1 pkg 12 in. prebaked pizza crust (i use boboli) or make your own
1/3 c alfredo sauce
1 c shredded rotisserie chicken, tyson already-grilled chicken or make your own

BBQ Chicken Pizza with Balsamic Caramelized Onions image

Steps:

  • 1. Preheat oven to 350F. Slice your peppers and using a microwave safe plate, cover with paper towel and microwave for 1 minute. *This softens the peppers and ensures your peppers will crisp and cook through while baking*. Set aside. In a small saute pan, add your olive oil and your butter and bring to medium high heat. Once heated, add your sliced onions. Saute till onions start to become soft, add your balsamic vinegar. Continue tossing and stirring till they start to become caramelized and slightly charred, about 4-6 minutes. Take off heat and set aside.
  • 2. On your pizza crust, spread almost the entire bottle of bbq sauce over the crust, reserving about 1/4 cup. Add your shredded chicken. Now comes the fun part; add 1/3 cup of your shredded cheddar cheese over the chicken, and 1/3 cup of the pepper jack cheese as well. Now add your peppers and finally add your amazingly delicious, (you just want to sit down and eat the whole pan) balsamic caramelized onions.
  • 3. Sprinkle on the remainder of the pepper jack cheese, and 1/2 cup each of shredded cheddar and mozzarella cheese. Drizzle the remainder of the bbq sauce evenly over the pizza.
  • 4. Now add the remainder of your cheeses over your pizza, smile at your creation with adoration and place in oven to bake!
  • 5. Bake for 20-22 minutes till pizza is nice and crispy!! Enjoy!

1 bottle favorite bbq sauce
5 c cheese divided - ( 2 cups shredded cheddar cheese, 3 cups mozzarella (1 pkg), 1 cup pepper jack)
1 large onion sliced (i used a large vidalia)
1 medium green pepper sliced
1 medium red pepper sliced
2 c shredded chicken of choice (i used leftover grilled chicken thighs, skins removed)
2 tsp balsamic vinegar
1 Tbsp olive oil
1 Tbsp butter

WHITE PIZZA WITH CARAMELIZED ONION AND CHICKEN

This is a garlicky pizza that includes a white sauce. If you don't want to make your own sauce you can substitute with a little pesto sauce.You can also substitute pita bread in place of the pizza crust.

White Pizza With Caramelized Onion and Chicken image

Steps:

  • Caramelized onions: Melt butter with olive oil in pan over medium heat. Add sliced onions and brown sugar and cook for 8 minutes, stirring occasionally. Remove from heat.
  • Sauce: Meanwhile, place milk, cornstarch, garlic, garlic salt, onion powder, oregano, salt, pepper, and nutmeg in a medium saucepan. Bring to a boil and continue to cook for 2 minutes. Reduce heat and simmer until sauce thickens, about 3-4 minutes longer. Remove from heat.
  • Pizza: Spread prepared dough with white sauce. Sprinkle with garlic and half of mozzarella cheese. Spread on shredded chicken, onions, tomatoes, capers and the rest of the cheese. Add the optional ricotta and pineapple if desired.
  • Using a pastry brush, brush a thin coating of olive oil around the outer crust and then lightly sprinkle with garlic salt.
  • Cook in a 450°F oven for 10-15 minutes until cheese is bubbly and crust in browned.
  • Let set for 5 minutes before cutting and serving.

Meaty Grilled Pizza with Caramelized Onions and Mushrooms image

Steps:

  • Prepare a grill for medium heat.
  • Roll out the pizza dough and form into a circle. Put the dough on the grill, cook for 2 minutes and then flip with tongs. Move to a cooler spot on the grill and cook until the dough begins to pull away from the grill, about 2 minutes.
  • Remove the dough to a work surface. Add the sauce, cheese, pepperoni, sausage, Caramelized Onions and mushrooms and place back on the grill over indirect heat. Cook until the cheese melts, about 5 minutes. Garnish with basil and serve warm.
  • Melt the butter in a medium skillet over medium heat. Add the onions and a pinch of sugar if using and toss to coat the onions. Cover and cook, stirring occasionally, until the onions turn golden, about 10 minutes. Turn the heat up to medium high and continue to cook, stirring constantly, until the onions begin to brown, another 10 minutes. Season with salt and pepper.

  • In 12-inch skillet, melt 2 tablespoons of the butter over medium heat. Add sweet onions and thyme; cook about 20 minutes, stirring occasionally, until soft and golden. Stir in salt and pepper. Caramelized-Onion and Gorgonzola Grilled Pizza image

Steps:

  • Heat 1/4 cup oil in a 12-inch heavy skillet over medium-low heat until it shimmers, then cook onions with 1/2 tsp salt and 1/4 tsp pepper, covered, stirring occasionally, until golden, 15 to 20 minutes. Transfer to a small bowl and keep warm, covered.
  • Prepare a grill for direct-heat cooking over low charcoal (medium heat for gas).
  • Stretch dough into a roughly 12- by 10-inch rectangle on a large baking sheet and brush with 1 Tbsp oil.

  • Heat grill for indirect grilling: Light one side of grill, leaving other side unlit. Close lid; heat grill to 400ºF.
