GROUND BEEF TACO BAKE

This dish takes the best of tacos and is incorporated into a baked casserole. Top with sour cream if desired.

Ground Beef Taco Bake image

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a 7x11-inch casserole dish with cooking spray.
  • Heat ground beef in a skillet over medium heat. Cook and stir, breaking up into crumbles, until browned, about 5 minutes. Add onion and garlic and cook for 5 more minutes. Mix in diced tomatoes and green chiles, tomato sauce, rice, water, and taco seasoning; stir to combine. Transfer mixture to the prepared casserole dish and cover with foil.
  • Bake in the preheated oven for 30 minutes. Remove foil and sprinkle Cheddar cheese evenly over the top. Continue baking until cheese is golden and lightly browned, about 15 minutes more.

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spray a 9x13-inch baking pan with cooking spray.
  • Cook ground beef and onions in a skillet over medium heat until beef is browned, 7 to 10 minutes; drain grease. Stir in water and taco seasoning; cook, stirring often, until thickened, about 2 minutes. Add refried beans, salsa, olives, and green chiles. Cook and stir over low heat until ingredients are warmed through, 3 to 4 minutes.
  • Place half of the taco shells in the bottom of the baking dish. Pour in half of the ground beef mixture; sprinkle with half of the Cheddar cheese. Repeat with remaining taco shells, ground beef mixture, and Cheddar cheese.
  • Bake in the preheated oven until cheese is melted and bubbly, 20 to 25 minutes.

Steps:

  • Preheat oven to 350°. Unroll crescent dough into a rectangle; press onto the bottom and 1 in. up the sides of a greased 13x9-in. baking dish. Seal seams and perforations. Sprinkle with 1 cup of chips; set aside., In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in tomato sauce and taco seasoning; bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. Spoon over chips. Top with sour cream, cheese and remaining chips. , Bake, uncovered, until crust is lightly browned, 25-30 minutes.   • Preheat oven to 350 degrees F (175 degrees C).
  • Cook and stir ground beef in a large skillet over medium-high heat until crumbly, evenly browned, and no longer pink, 5 to 7 minutes. Drain and discard any excess grease. Stir salsa, onion, mayonnaise, chili powder, and cumin into the beef. Remove from heat.
  • Spread about half the ground beef mixture into the bottom of a 2-quart casserole dish. Spread about half the tortilla chips in a layer atop the beef mixture. Beef and Bean Taco Casserole image

Steps:

  • Preheat the oven to 375 degrees F. Lightly oil a 9-by-13-inch casserole dish.
  • Heat the oil in a large skillet over high heat. When the oil is shimmering, add the beef and sprinkle with the chili powder, cumin, oregano, 1 teaspoon salt and a few grinds of pepper. Cook, breaking up the meat into smaller pieces, until browned, about 5 minutes. Add the onions and garlic and cook until the onions are soft, about 5 minutes more. Add the beans, salsa and 1/2 cup water and bring to a simmer; cook until the sauce thickens and coats the meat, about 5 minutes. Add salt and pepper to taste. (This beef-and-bean mixture can be made up to a day ahead of time.)
  • Lay half the tortilla chips on the bottom of the oiled casserole dish. Spread half the meat mixture on top. Sprinkle half the cheese blend over the meat. Repeat with the remaining chips, meat and cheese. Bake uncovered until the cheese melts and the casserole is hot, about 20 minutes.
  • Top with sour cream, lettuce, tomato, avocado and pickled jalapenos if desired. Serve with more salsa and tortilla chips on the side.

  • Brown ground beef, adding Taco seasoning when nearly browned with juice from tomato can, I leave in the fat from the burger, drain of you like before adding the seasoning.
  • Add tomatoes, cheese soup, and corn.
