Steps:
- Heat medium skillet over medium heat, add the butter and when melted add the onions and cook until soft and tender, 20 minutes. When done, add a splash of water and stir in the mustard.
- Add sauerkraut to a small pot and keep warm over low heat.
- Combine sour cream, ketchup and relish in a small bowl and reserve.
- In a large bowl, combine the meat, spices, parsley, vinegar and salt and pepper, to taste. Form 4 patties, thinner at middle and thicker at edges for more even cooking and to prevent burgers from bulging at the middle. Heat the oil in nonstick skillet over medium-high heat. Cook patties 5 minutes on each side. Melt the cheese over the patties the last 2 minutes of cooking, under foil tent.
- To serve, pile the onions on the bun bottoms and top with a leaf of lettuce, cheese wurst burger, sauerkraut, and the sour cream sauce. Cover with the tops of the buns and serve.

Steps:
- Pulse the bacon and garlic in a food processor until coarsely ground.
- Combine the ground pork, 1 teaspoon salt, 1/4 teaspoon pepper and the sage in a large bowl. Add the bacon mixture and gently mix with your hands. Gently form the meat into 4 balls, then lightly press into 4-inch-wide, 1-inch-thick patties. Make a 2-inch-wide indentation in the center of each with your thumb to prevent the burgers from bulging when grilled.
- Preheat a grill to medium high. Season the patties with pepper. Grill, undisturbed, until marked on the bottom, 5 to 6 minutes. Turn and grill until the other side is marked and the patties feel firm, 4 to 6 more minutes. Meanwhile, spread the cut sides of the buns with butter and toast on the grill.
- Serve the patties on the buns; top with coleslaw.
TURKEY REUBEN BURGERS
I'm not a big fan of turkey burgers, but finding ground turkey on sale and some on-hand ingredients inspired this recipe. Most of the ingredients can be substituted or exchanged based on taste. Don't let the few ingredients in the burger itself fool you....it's got lots of flavor for a turkey burger. Feel free to add 8 oz. or more sliced mushrooms to the onions when cooking, if you happen to be a mushroom lover. This is great with sweet potato fries and/or a spinach salad. Serve with additional thousand island dressing for dipping.

- To assemble burgers, layer turkey and cheese patties, sauerkraut, and cooked onions between bread slices.

- Prepare grill for cooking over medium-hot charcoal or medium heat for gas. If baking pre-heat oven to 350 degrees.
- Mix together pork, 1 teaspoon salt, 1 tablespoon pepper, and 1/4 cup barbecue sauce until combined (try not to overmix), then form into 8 burgers about 3/4 of an inch thick. I usually divide the burgers into 8 balls, as equal as I can get them, and then make the patties.
- Oil grill rack, and then grill patties turning over occasionally, until cooked through, about 10 minutes per side. Brush top of each patty with 1 tablespoon barbecue sauce, then turn over and grill 30 more seconds. Repeat as often as you desire.
- If baking these burgers in the oven prepare a rimmed baking sheet with tinfoil and a rack lightly coated in cooking spray. Cook for approximately 25 to 30 minutes. Stop every 10 minutes to baste with barbecue sauce and flip. You will be glad you did! Also, rotate your baking sheet during cooking.

- Warm a heavy bottom skillet over high heat. Add in the bacon fat. When the fat shimmers, add in the onion and a pinch of salt. Cook, stirring occasionally, for six to eight minutes. I like the onions in this recipe to have a little char on them, so I cook them over high heat the whole time.
- When the onions are done, transfer them to a bowl. Add in the ground pork and all remaining ingredients. Mix well with your hands to incorporate all the spices and egg yolk.
- Break off tennis ball sized portions of the pork mixture. Form them into patties with your hands. Set aside until all the pork patties have been made.
- Reheat the skillet and add in the duck fat, bacon fat or lard. Heat at medium-high. When the fat is hot, add in the pork burgers. Don’t crowd the pan, otherwise they will just steam rather than brown. I typically can only fit five of the six into my pan, so I just cook the extra one after the first batch is done.

- Combine all the ingredients in a large bowl and mix well, making sure to distribute the spices evenly.
- Divide the mixture into 4-6 even parts and form burger patties, making sure to squish them with your hands in the middle. Make them as wide as your burger bun and not too thick in the middle so they cook evenly.
- Preheat a large skillet to medium heat. Spray or brush with olive oil. Carefully place the burgers on the skillet, cover with a lid, and cook about 4 minutes per side, or until fully cooked to an internal temperature of 160F. Assemble your burgers and enjoy!
- Combine all the ingredients in a small bowl and stir together with a fork. Spread over toasted burger buns while assembling your burgers. This keeps well in the fridge for up to 3-4 days.
