Steps:

  • 1. Preheat oven to 375°F (190°C). 2. With sharp knife, score top of Brie in criss-cross pattern cutting just through the rind. Do not cut through the edge. Place in glass pie plate. Spread jelly over top all the way to edge. Sprinkle with pecans, then brown sugar. 3. Bake in centre of oven for 20 minutes. Cool for 5 to 10 minutes before serving in pie plate with sliced baguette or crackers. ¼ cup (50 mL) PC Hot Red Pepper Jelly
¼ cup (50 mL) chopped pecans
1 tsp (5 mL) packed dark brown sugar

Steps:

  • 1. Preheat oven to 400 degrees.
  • 2. Using a warmed sharp knife, cut the wheel of brie in half horizontally and separate the top half from the bottom half. Sprinkle the bottom half of the brie with the dried fruit, toasted almonds, and brown sugar. Replace the top half of the brie and apply pressure to secure the stuffing.
  • 3. Working on a floured surface, roll out the puff pastry so it will fully cover the brie. Place the brie on the puff pastry and pull up the sides around the brie wheel. Roll out another sheet of puff pastry and cut out a circle to cover the top of the brie. You can use the trimmings for decorations if you wish.
  • 4. Using a pastry brush, brush the top of the brie with egg wash and place the puff pastry circle on top.
  • 5. Place on a cookie sheet lined with parchment paper. Bake for 20-30 minutes until the puff pastry is golden brown and then turn the oven down to 325 degrees. Bake for another 20 minutes.
  • 6. Serve on a pretty platter with crackers.

Steps:

  • Combine all ingredients in dutch oven or other large pot and cook at low heat allowing to simmer slowly for about 4 hours, turning meat and stirring occasionally (If making in crock pot, cook on high for 5 to 6 hours).
  • Remove meat and shred with fork, discarding fat.
  • Put the meat back into the liquid and simmer for about 30 more minutes.
  • (If using crock pot just turn to low until ready to serve) Serve on your favorite buns or rolls.

  • Place a large skillet over medium-high heat, and drizzle in about 2-3 tablespoons of oil; once hot, add in the sliced onions along with a pinch of salt and pepper, and cook the onions, stirring occasionally, until they become deeply golden-brown and caramelized, about 20 minutes.
  • Once golden, stir in the teaspoon of sugar, followed by the balsamic vinegar, and allow the mixture to bubble up and reduce, stirring to incorporate; allow the onions to cook for another 3-5 minutes, stirring frequently now, until jam-like and deeply browned; then, add the 1 teaspoon of thyme leaves, stir to combine, and remove from pan and allow to cool (you should have roughly 1/2 cup).
  • To prepare the baked brie, lightly flour your work surface, and roll out the thawed puff pastry sheet to about 1/8” thickness, a bit larger than the wheel of brie (trim the puff pastry a little bit if it's considerably too large for your brie); place the brie in the center of it, spoon over top of it the cooled, balsamic caramelized onions, then fold the puff pastry sheet over top to cover everything, creating a little “package” with pleats.
  • Place the wrapped brie “package” onto a small baking sheet lined with parchment paper, and very gently brush some egg wash over the puff pastry (avoid allowing it to pool underneath), and place into the fridge to chill for 30 minutes (or even overnight), covering lightly with plastic wrap.
