BAKED HAM HOAGIES
For any holiday or gathering, I prefer quick-and-easy dishes since I work full-time. This main dish is fun since everyone can fix their own sandwich the way they like it. Adding cola to the ham while it bakes makes for moist, tasty slices. -Sundra Hauck, Bogalusa, Louisiana

- Place ham in a roasting pan. Score the surface with shallow diagonal cuts, making diamond shapes. Add water to the pan. Cover and bake at 325° for 1-1/4 hours., Pour cola over ham; sprinkle with brown sugar. Bake, uncovered, 30-45 minutes longer or until a thermometer reads 140°. , Let stand for 10 minutes before slicing. Serve on buns with lettuce, cheese and tomatoes.

- In a small saucepan over medium heat, combine the first five ingredients; bring to a boil. Reduce heat; cover and simmer for 15 minutes. Serve on buns with lettuce, tomato, onion, cheese; top with ham mixture.

AWESOME SWISS AND MOZZARELLA HAM HOAGIES
We used to love to go to this old family owned drive-in restaurant called Romano's. These hoagies were incredible! This is my version of them. They closed years ago unfortunately. :(

Steps:
- Spread inside bottoms of rolls with mayo. Toss ham slices in dressing.
- Pile ham inside rolls, don't lay flat.
- Mix cheeses together, pile on top of ham. Wrap each in foil loosely, sealing top of foil closed.
- Bake in 350º oven for 20 minutes or til heated through and cheese is melted.
- Remove from oven.
- Spread top rolls with butter and broil til butter is melted and tops are lightly toasted.
- While tops are toasting, open foil and top hoagies with lettuce tossed in a little salt and pepper, then top with tomato slices.
- Do this fairly quickly so your tops don't burn under the broiler!
- Then place on tops and enjoy!
- *You can spread tops with additional mayo if desired.
HOT HAM AND CHEESE SANDWICHES
Don't settle for ordinary ham and cheese sandwiches when you can make something deliciously different. The horseradish mustard dressing perfectly compliments the ham.

Steps:
- Preheat oven to 250 degrees F (120 degrees C).
- Combine butter, mustard, onions, poppy seeds and dill seed. Spread insides of buns with this mixture. Place a slice of cheese and a slice of ham inside each bun.
- Wrap buns in foil and place in preheated oven. Bake for 15 to 20 minutes, until cheese has melted.

- PREP: Preheat the oven to high broil (optional). Thinly slice the peppers, onion, and mushrooms. See Note 1. Mince the garlic and chop up the ham.
- COOK: In a large (12 inch) oven-safe skillet, heat the olive oil on medium-high. Add in the sliced peppers and onion. Season with salt and pepper, about 1/8 teaspoon each. Sauté, stirring occasionally, for about 5 minutes or until softened and onion is translucent. Add in the sliced mushrooms and garlic. Stir-fry for another 3-5 minutes or until veggies are crisp tender. Add in the chopped deli ham along with the parsley, basil, Italian seasoning, and dried thyme. Season again with salt and pepper to taste; I add about 1/4 teaspoon of each. Stir and heat through the ham for about 2-3 minutes.
- BROIL: In the pan, separate the mixture into 4 equal parts and section those parts into 4 mounds in the skillet about the width of the Provolone cheese slices (see picture in post). Place a slice of cheese over each section. Cover the pan and let melt for a few minutes, or slide into the oven and broil for 1-2 minutes, watching closely to avoid burning anything. Gently mix the cheese into the peppers and onions in each individual portion. The cheese will help hold everything together.
- HOAGIE BUNS: If desired, spread butter on the insides of the buns. Add to a skillet or griddle and lightly brown the buns over medium heat. Add one scoop of the cheesy meat and veggies per bun. Enjoy while hot!
