HAM AND CHEESE WAFFLES
Like most kids, my children love pizza...given the chance, they'd probably eat it for every meal! So their eyes lit up when I first served these waffles with pizza-like ingredients for breakfast.

- In a bowl, beat eggs, milk and oil. Combine flour, baking powder and salt; add to egg mixture and beat until smooth. Fold in cheese and ham or bacon. , Bake in a waffle iron according to manufacturer's directions until golden brown. Top each waffle with a fried egg if desired.

- Fold the ham, cheese and pepper into the prepared waffle batter in a large bowl.
- Preheat a waffle iron and coat with cooking spray. Pour some batter into the waffle iron, spreading it into the corners. Close the lid and leave it closed until the waffles are cooked through and golden brown in spots, 6 to 8 minutes. Continue until all the batter has been used.
- Cut the waffles into sticks, transfer to plates and serve with maple syrup.

Cracking eggs onto a well-greased waffle iron will give you perfectly-cooked, intact sunny-side up eggs, complete with crispy, lacy edges. Break the yolks for a gooey sauce topping to these Gruyere-and-ham-laced waffles.

- Preheat a waffle iron to medium-high. Preheat the oven to 200 degrees F. Whisk together the flour, Gruyere, ham, Parmesan, baking powder, sugar, 1/4 teaspoon salt and a few grinds of pepper in a large bowl. Whisk together the milk, butter, oil, 1 egg and the scallions in another bowl. Pour the milk mixture into the flour mixture and gently stir until just incorporated (it's okay if there are some lumps).
- Lightly brush the top and bottom of the waffle iron with butter. Fill the waffle iron about three-quarters of the way full (some waffle iron should still be showing). Close the lid gently and cook until the waffles are golden brown and crisp, 6 to 7 minutes. Keep the cooked waffles warm in the oven or covered with foil on a plate while you make the remaining waffles.
- Lightly brush the waffle iron bottom with more butter. Crack the remaining 4 eggs right onto the waffle iron and keep the iron open (do this in batches if your iron isn't large enough). Sprinkle the eggs with salt and pepper. Cook until the whites are set and the yolk is still runny, 4 to 5 minutes. Serve 1 egg on each waffle, using a spatula to transfer.

- Heat waffle maker; lightly brush with vegetable oil, if necessary. In medium bowl, stir Bisquick™ mix, milk, oil, egg, ham and shredded cheese.
- Pour 1/2 cup batter onto center of hot waffle maker. (Waffle makers vary in size; check manufacturer's directions for recommended amount of batter.) Close lid of waffle maker. Bake according to manufacturer's directions until steaming stops and waffle is golden brown; carefully remove waffle. Repeat with remaining batter. - Preheat oven to 350°. Arrange onions and asparagus on a greased 15x10x1-in. baking pan; toss with 1/4 teaspoon salt and pepper. Roast until lightly browned, 10-12 minutes. Cool slightly; reserve 1/4 cup vegetable mixture for topping. , Preheat a greased waffle iron. Separate 3 eggs. Whisk flour, baking powder, cayenne pepper and remaining salt. Add milk, 3 egg yolks and melted butter; mix gently but thoroughly. Stir in remaining onion and asparagus mixture and 3/4 cup shredded cheese, In another bowl, beat 3 egg whites on high until soft peaks form. Fold into waffle mixture. Bake waffles according to manufacturer's directions until golden brown., Meanwhile, in a large skillet coated with cooking spray, cook ham until heated through; keep warm. - Stir the liquid ingredients into the dry ones.
- Add your melted butter.
- Add the chopped ham.
- Beat the egg whites until they are stiff and add them to the batter just before making.
- Preheat the waffle iron for 2 minutes.
- Add batter, cook and enjoy!
