BISTRO BREAKFAST BURGER
Use a gentle hand when forming the patty; you want it to be tender and juicy, not dense. After stacking the burger patty on the bun with the cheese, return to the oven for 1 to 2 minutes to get a gooey melt, and then resume building your burger.

- Preheat the oven to 350 degrees F. Mix the ketchup, brown sugar, Worcestershire sauce, chili powder and hot sauce in a small bowl. Set aside.
- Using a fork, gently mix the beef with the paprika, 1 teaspoon salt and 1/2 teaspoon black pepper. Form into four 5-inch patties. Cover and set aside.
- Cook the bacon in a large nonstick skillet over medium heat until the fat is rendered and the bacon is crisp, about 8 minutes. Remove and drain on a paper-towel-lined plate. Pour off most of the bacon fat, leaving about 2 teaspoons in the skillet, reserving the extra bacon fat. Heat the skillet over medium-high heat. Add the burgers to the skillet, 2 at a time, and cook until nicely browned, 4 minutes. Flip and cook the other side until the burger is done, about 4 minutes for medium-rare. Repeat with the remaining burgers. Place the burgers on a rimmed baking sheet and place in the oven to keep warm while cooking the eggs.
- Wipe out the skillet. Add 1 tablespoon of the reserved bacon fat to the skillet and heat over medium-high heat. Break the eggs into the skillet and cook until the whites are set, about 5 minutes. Season with salt and pepper.
- Meanwhile, brush the buns with melted butter. Place them on a rimmed baking sheet and bake until lightly toasted, about 10 minutes.
- Build the burger by placing a hamburger patty on the bottom bun, add a slice of cheese, 2 pieces of bacon and top with a fried egg. Spread the top bun with some of the spiced ketchup and place on top.
BREAKFAST FOR DINNER SAUSAGE-AND-EGG BURGERS
A breakfast sausage patty stands in for a regular beef one in this breakfast-for-dinner sandwich. It's then topped with cheese, a fried egg and sweet sriracha mayo.

- Mix together the mayonnaise, honey and sriracha in a small bowl. Spread on the inside of both halves of all the buns. Divide the lettuce, tomato and onion evenly among the bottom buns.
- Divide the sausage into 4 even pieces and pat and squeeze each piece into a ball. Put each ball on its own piece of plastic wrap and flatten into a thin patty 4 to 5 inches wide.
- Heat the oil in a large nonstick skillet over medium-high heat. Remove the patties from the plastic wrap, add them to the skillet and cook until browned on both sides and cooked through, about 3 minutes per side. Lay a slice of Cheddar on each patty, cover the skillet and cook until the Cheddar melts, about 30 seconds. Transfer the patties to the bottom buns.
- Crack the eggs into the skillet, sprinkle with some salt and pepper and cook until the egg whites are set and the bottoms and edges are crispy and the yolks are still runny, 2 to 3 minutes. Set an egg on top of each sausage patty and top with the top buns. Eat right away.
BREAKFAST SAUSAGE AND EGG CHEESEBURGERS

- Preheat a grill to medium high.
- Form the sausage meat into 4 patties. Use your thumb to make an indentation in the center of each patty so they don't curl up while cooking. Grill until cooked through or the internal temperature reaches 160 degrees F, 3 to 5 minutes per side, depending on thickness. Add 2 slices of American cheese to each patty and close the grill until melted, about 1 minute.
- Place some avocado slices on the bottom buns and season with pinch of salt. Add a patty, then top with an egg and a few pickled Fresno chiles. Add the top bun and serve.

- For the dressing: Stir the mayonnaise, mustard and horseradish together in a small bowl and set aside.
- For the burgers: Gently mix together the ground beef, sausage and 1/4 teaspoon each salt and pepper. Divide the meat into 4 pieces and form each into a 4-inch patty.
- Melt the butter in a 12-inch nonstick skillet over medium-high heat and add the patties. Cook until well browned, about 3 minutes, and then flip. Top with some of the cheese and continue to cook until the cheese is melted and the burger is just cooked through, 2 to 3 minutes.
- Spread the toasted muffins with some of the mustard dressing and top with a slice of tomato and a burger patty.
- Crack the eggs into the skillet with the sausage drippings and cook to your preference.
- Place an egg on each burger and finish with some baby arugula on the top of the English muffin.
EASY BREAKFAST SAUSAGE BURGERS

- Form the bulk hot pork sausage into 5 patties. Heat a large skillet, and fry the patties over medium high heat. Remove the sausage from the skillet and drain on paper towels.
- Melt butter in a second large skillet, and toast the buns over medium heat until golden brown.
- Meanwhile, break the eggs into the same skillet used for frying the sausage; reduce the heat to medium-low. Cook until the white is completely set and the yolk thickens. Flip the eggs and continue cooking for another 30 seconds, or until the yolk is to the diners' preferences.
- Stack your toasted buns starting with the pickles and jalapeno slices on the bottom, then the cooked sausage patty, pepperjack cheese, fried egg, and onion. Cover with the top half of the bun. Enjoy as the cheese melts between the egg and the sausage.

THE HANGOVER CURE BURGER (SPICY BACON, EGG AND CHEESE BURGER)
This burger does not need chips or fries. This burger will smack the hang over out of just about anyone. It's a personal spin on the cross-country burger that they used to make where I worked in Portland. This is spicy meat fans favorite! It's not as complicated as it looks, and it's WORTH it if you're not watching your waist line.

- Mix hamburger, jalapenos, green onion, Worcestershire sauce, and black ground pepper. Mix only enough to combined. Shape into 4 burgers and lightly sprinkle with seasoning salt and garlic powder to taste.
- Let sit in fridge to rest and let the flavors mingle for 15-20 minutes.
- Meanwhile mix up your sauce and cut your veggies.
- Sauce: In bowl whisk together mayo, horseradish, garlic, Tabasco and cayenne pepper. Place in fridge until time to build burgers.
- Grill each burger to your preferred wellness. You may use broiler or outside BBQ, your choice.
- Heat Oven to 400°F.
- Once burgers are done, get out a large frying pan and coat with non-stick cooking spray. Heat pan on High heat until pan get nice and hot. Crack your four eggs seperately and break the yolk. Turn heat to Med-high. Cook about 2 min per side, or until egg is cooked "over hard" (all yolk and whites are completely cooked, not over cooked). Once all four eggs are individually cooked, place them on a plate with a spatula.
- Split your buns and toast in oven for about 3-4 minutes or until lightly toasted. Spread about a heaping tablespoon of sauce from fridge onto each inner side of toasted buns.
- Build burger as follows:.
- Bottom half of bun w/ sauce.
- 2 kosher dill pickle slices.
- hamburger patty.
- pepperjack cheese.
- bacon slice (2 halves side by side).
- Fried egg.
- American cheese.
- 1 oz deli ham.
- tomato slice.(optional).
- onion slice.
- lettuce leaf.
- top of bun w/ sauce.
- Insert each burger with two toothpicks, one on each side. Cut in half (making sure there is a toothpick on each side) and serve.
- So big you won't need chips or fries. Great to split in half and share too!
