HARICOTS VERTS (THIN FRENCH GREEN BEANS) WITH HERB BUTTER

By mixing butter, shallots, fresh herbs, and lemon juice together right in the serving bowl, you get an instant dressing on contact with hot haricots verts that you toss in at the last minute. Nothing could be simpler, or more packed with flavor.

Haricots Verts (Thin French Green Beans) with Herb Butter image

Steps:

  • Stir together all ingredients except haricots verts with 3/4 teaspoon salt and 1/4 teaspoon pepper in a large bowl until combined well.
  • Cook beans in a large pot of boiling salted water (1 tablespoon salt for 6 quarts water), uncovered, until crisp-tender, about 6 minutes, then drain. Toss with herb butter.
  • Do Ahead
  • Herb butter can be made ahead and chilled, covered, 3 days or frozen, rolled into a cylinder in plastic wrap and kept in a sealed bag, 1 week. Haricots verts can be trimmed 1 day ahead and chilled in a sealed bag lined with paper towels.

5 tablespoons unsalted butter, softened
3 tablespoons finely chopped shallots
3 tablespoons finely chopped flat-leaf parsley
2 teaspoons finely chopped tarragon
1 1/2 teaspoons grated lemon zest
1 tablespoon fresh lemon juice
2 lb haricots verts or other green beans, trimmed

Steps:

  • Steam beans until just tender, 3 to 8 minutes. While beans are steaming, whisk together remaining ingredients and salt and pepper to taste. Toss beans with dressing and season with salt and pepper.

3 tablespoons extra-virgin olive oil
2 teaspoons Dijon mustard
2 teaspoons white-wine vinegar
1 shallot, minced

  • If you are making the dressing, in a small bowl combine the mayonnaise, orange juice and zest, shallot, parsley, olive oil, vinegar, and mustard . Season with salt and pepper and set aside.
  • Place a large skillet with a lid over medium-high heat and add 1 tablespoon olive oil or butter. Add the shallots and onions, season with salt and pepper and sauté for about 10 minutes until softened and slightly golden. Remove to a plate.
  • Return the skillet to medium heat and add the remaining tablespoon olive oil or butter. Add the haricot verts and season with salt and pepper to taste. Increase the heat to medium-high, and cook for 2 minutes, only stirring once or twice until the beans are nicely coated with the butter, and browned in a spot or two. Add 2 tablespoons of water, cover the pan and steam the veggies until they are bright green and almost cooked through, 3 minutes longer. Remove the lid, stir in the onions, and allow the rest of liquid to evaporate, while the vegetables finish cooking to your liking, 1 to 2 more minutes. Taste for seasoning, adding more salt and pepper if necessary. Serve hot or warm, either with the dressing, and/orthe cheese, or without.
