HASH BROWN BEEF PIE
Convenient frozen hash browns and shredded cheddar cheese top this hearty mixture of vegetables and ground beef. "It has just the right combination of spices," reports Mina Dyck of Boissevain, Manitoba. "Because I'm cooking for one, I like that the leftovers reheat well in the microwave."

- In a large skillet, cook beef, onion and garlic until beef is no longer pink; drain. Stir in tomatoes, chili powder, oregano, salt and pepper; bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. Stir in the vegetables. , Pour into a greased 9-in. pie plate. Combine topping ingredients; spoon evenly over the meat mixture. Bake, uncovered, at 400° for 30 minutes.

QUICK PASTY PIE
This is my much quickened version of a pasty, put into pie form. For those who are unfamiliar with pasties, they are a pastry filled with meat, potatoes and onions, then folded into a half-circle. I live in an old mining town and these are still popular from the old days when the men would take them in their lunch boxes.

Steps:
- Preheat oven to 450°F.
- Place crust in an 8-inch pie pan and press into bottom of pan.
- In a large bowl, thoroughly combine hash browns, ground beef, shredded onion, garlic, salt and pepper, and carrots (if using).
- Place filling into the pie pan and top with second pie crust.
- Seal edges of crusts together and cut vents into the top crust.
- Bake for 50-60 minutes or until meat is cooked through (I use a meat thermometer).
- Serve topped with beef gravy or ketchup, if desired.
- ***TIP - to prevent the edges of the pie crust from browning to quickly, wrap aluminum foil around the edges of the pie before baking, then remove with 20 minutes left.
EGG AND HASH BROWN PIE
Not only is this casserole easy to make and great tasting, it's pleasing to the eyes with it's shades of golden brown, yellow, and green. This dish is great served with sliced fruit and toast or muffins. You may substitute chopped cooked ham for the bacon if you wish.

- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble, and set aside.
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 7x11 inch baking dish.
- In a large bowl, beat together the eggs and milk. Stir in the bacon, hash browns, green onions, and 1 cup shredded Cheddar cheese. Pour into the prepared baking dish.

- Mix potatoes, corn and onion salt. Spray 10-inch nonstick skillet with cooking spray; heat over medium heat. Pack potato mixture firmly into skillet, leaving 1/2-inch space around edge. Reduce heat to medium-low. Cook uncovered about 10 minutes or until bottom starts to brown.
- Meanwhile, mix eggs, milk, marjoram and pepper sauce. Pour egg mixture over potato mixture. Cook uncovered over medium-low heat.
