HAVARTI CHEESE MASHED POTATOES
I just love the flavor of Havarti cheese its so creamy and topped on these potatoes it just adds to the creaminess and flavor , I never seem to make just plain mashed potatoes with out adding something for flavor .

Steps:
- Preheat your oven @ 400°.
- Lightly grease a casserole dish and spread the mashed potatoes in the dish.
- Whip the cream until stiff and fold in the cheese and salt.
- Pour the cream mixture over top of the potatoes and spread evenly in the dish.
- Bake uncovered for 15 - 20 minutes or until golden brown.
HAVARTI CHEESE SCALLOPED POTATOES
My family loves this dish. I use a mandoline to make the potato slices uniform, and slicing go quicker.

Steps:
- 1. Heat oven to 350 degrees F. Butter a 2-quart shallow baking dish.
- 2. Lightly crush garlic with side of knife. Heat half and half, garlic, salt and pepper in small saucepan over medium-high heat, until small bubbles appear around edge of pan; remove from heat and let stand 10 minutes. Discard garlic.
- 3. Meanwhile, pat potato slices with paper towels. Arrange half the potatoes in overlapping slices along the bottom of prepared dish. Pour half the cream mixture over the potatoes, then sprinkle with half the cheeses. Repeat with remaining potatoes, cream mixture and cheeses.
- 4. Bake 60 to 70 minutes, until top is a deep brown and potatoes are tender when pierced with a knife. **Parboiling or letting the sliced potatoes stand in cold water before baking will reduce their starch content and make the dish runny.
CHANTILLY POTATOES

- Place potatoes in a Dutch oven; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, until tender, 15-20 minutes. Drain, reserving 1 cup cooking water. Add water, olive oil, garlic and parsley to pan. With a mixer, beat potatoes until light and fluffy, 3-5 minutes. Season with 1/2 teaspoon salt and 1/4 teaspoon pepper. Set aside and keep warm., Meanwhile, heat meat drippings in a large saucepan. Combine cornstarch and water until smooth. Bring meat drippings to a boil; gradually stir in flour mixture until smooth. Cook and stir until thickened, about 2 minutes. Season with remaining 1/2 teaspoon salt and 1/4 teaspoon of pepper. Serve with mashed potatoes.

- Heat oven to 350°F. Grease 1 1/2-quart casserole. Place potatoes in 4-quart Dutch oven; add enough water (salted if desired) to cover. Cover and heat to boiling; reduce heat. Simmer about 10 minutes or until potatoes are tender; drain. Shake potatoes in Dutch oven over low heat to dry.
- In large bowl, mash potatoes until no lumps remain. Add milk in small amounts, beating after each addition (amount of milk needed to make potatoes smooth and fluffy depends on kind of potatoes used).
- Add sour cream, margarine, rosemary and salt. Beat vigorously until potatoes are light and fluffy. Stir in Havarti cheese. Spoon into casserole. Sprinkle with Cheddar cheese.
- Bake uncovered 30 to 35 minutes or until hot. Sprinkle with parsley.
