HAWAIIAN CHICKEN NACHOS

- Preheat oven to 350 degrees. In a small saucepan over medium high heat, combine the pineapple juice, brown sugar, and teriyaki sauce. Dissolve the cornstarch in the water and add to the saucepan. Bring to a boil, stirring until thickened. Mix the shredded chicken with the sauce until chicken is evenly coated.
- Place half of the chips in an oven safe baking dish; cover with layers of half of the cheese, chicken, pineapple, and onion. Repeat layers.
- Bake for 10 minutes. Top with crumbled bacon, jalapeno slices, and cilantro. Serve immediately.

- Preheat oven to 400°F.
- In a nonstick skillet heat 1 T oil over medium-high heat.
- Add ham; cook and stir for 2-3 minutes or until browned.
- Transfer to a plate.
- Heat the remaining 1 T oil in the skillet.
- Add the onion and pepper;
- cook for 2-3 minutes or until just softened.
- Remove from heat and stir in the ham.
- In a bowl mix together the cheeses.
- Place half the tortilla chips in the bottom of a 9x9x2-inch baking pan or 1 and 1/2 quart baking dish.
- Sprinkle with half the cheese, half the ham mixture, half the tomatoes, and half the pineapple.
- Repeat layers, starting with the remaining tortilla chips.
- Bake for 5 to 8 minutes or until cheese is melted and bubbling.
- Serve at once.

- In a small bowl, combine 1/3 cup sugar and cinnamon; set aside. In a small saucepan, combine honey and butter. Cook and stir over medium heat until blended. Brush onto both sides of tortillas; sprinkle tops with sugar mixture., Stack tortillas, top sides up; cut into sixths. Arrange wedges, sugared sides up, in a single layer on ungreased baking sheets. Bake at 400° for 6-8 minutes or until crisp and golden brown. Cool completely on wire racks., In a large bowl, beat cream cheese, vanilla and remaining sugar until creamy. Beat in whipped topping until blended. Fold in pineapple. Arrange tortilla wedges on a large serving platter. Spoon cream cheese mixture over wedges. Top with bananas, coconut and nuts. Serve immediately.

- Make the marinade and prepare the fish. In a small mixing bowl, combine the sesame oil, Tamari, Sriracha sauce and scallion. Stir to blend. Cut the tuna into a small dice and add it to the bowl. Mix to be sure it’s well coated with all of the ingredients and set aside.
- Make the rice chips. In a large heavy-bottomed saucepan, over medium-high heat, heat about 3-inches of the grapeseed oil to 340°F. (Amounts will depend on the size of the pan you choose.) Cut the rice papers into six triangles each with scissors, and line a baking sheet with a layer of paper towels. Once the oil is hot, drop the rice paper triangles into it, being sure there is space between them. They will turn bright white and puff up in literally 1 or 2 seconds. Use a slotted spoon to remove them and place them on the towel-lined baking sheet.
- Assemble and serve. Once the chips have cooled, arrange them on a serving platter and then evenly distribute the poke on top. Drizzle gingerly with a bit of the Sriracha and mayonnaise. Serve immediately.

- In a large bowl, whisk together the onion, garlic, ginger, pineapple juice, soy sauce, sugar, vinegar, and Asian sesame oil. Whisk until sugar is dissolved and marinade is well incorporated.
- Use paper towels to thoroughly pat-dry the chicken pieces. Place chicken in a single layer on a cutting board, place a sheet of cling wrap over the chicken, and pound to an even thickness. Throw out cling wrap. Use a fork to pierce chicken pieces throughout. Lightly sprinkle chicken thighs on both sides with table salt. Toss chicken in bowl of marinade to coat well. Cover and chill overnight, or up to 2 nights. Be sure to turn chicken pieces over halfway through, if all pieces aren’t completely immersed in marinade.
- Combine all salsa ingredients except for avocado in a bowl, toss well, and let chill until ready to use (dice and add the avocado just before using, to prevent browning.)
- Grease and heat outdoor or indoor grill to medium-high. Remove chicken from marinade and grill (basting with marinade as desired) just until center is no longer pink, taking care not to over-cook. Discard marinade. Let chicken rest 5 minutes, then dice.
