Brown Rice and Walnuts image

Steps:

  • Cook the rice using the package directions, omitting the salt and margarine.
  • Meanwhile, heat a small skillet over medium-high heat.
  • Dry-roast the walnuts for 4 minutes, or until beginning to lightly brown, stirring constantly.
  • Transfer the walnuts to a sheet of aluminum foil or a plate to prevent overcooking.
  • When the rice is tender, stir in the walnuts and the remaining ingredients.

Nutty Brown Rice image

Steps:

  • Bring water to a boil in a heavy medium saucepan. Add rice and 1/4 teaspoon salt, then reduce heat to low and simmer, uncovered, until rice is tender, about 40 minutes. Drain in a sieve.
  • Heat butter in a large heavy skillet over medium heat until foam subsides. Add nuts and cook, stirring, until butter and nuts are golden brown, about 4 minutes.
  • Add rice and nutmeg to skillet and toss to coat.

4 cups water
1 1/2 cups short-grain brown rice
3 tablespoons unsalted butter
1 1/4 cups mixed nuts, chopped
1/4 teaspoon grated nutmeg

Brown Rice With Onions, Garlic, and Pecans image

Steps:

  • Using chicken broth [or water for Vegetarian], cook the rice according to the package directions.
  • About 15 minutes before the rice is ready, melt the butter in a skillet over medium low heat.
  • Add the chopped onion and saute', stirring often, until the onion is very soft and begins to color, about 10 minutes.
  • Stir in the minced garlic and the pecan meats; saute' over medium heat, stirring, until the nuts and onions are golden and the garlic is tender.
  • After done cooking, let the rice stand, covered, for 5 minutes; spoon rice into a bowl, spoon the onions and pecans on top, and fluff with a fork or a chopstick.
  • Garnish with the green onions.
  • Makes 4 servings.
  • This is also good with other types of nut, such as pine nuts, pistachios, and walnuts, and also made with a mixture of white and wild rice; sliced mushrooms are also a good addition.
