HEALTHY HAYSTACK COOKIES

I got this recipe from a good friend. I can't say enough about these. If you don't like super-sweet cookies, this is for you. Not to mention it's packed full of "goodness"

Steps:

  • Mix peanut butter, honey, banana, water and salt. Add rest of ingrediant and mix together. Form a ball using a tablespoon and press each ball together tightly. Place each ball onto a sprayed cookie sheet and bake at 350 degrees for approximately 20 minutes.
  • My friend used raw honey, natural-smooth peanut butter, unsweetened coconut and raw honey.
  • Enjoy!

2/3 cup honey
2/3 cup cold water
1/3 cup mashed banana
1 teaspoon salt
2/3 cup flour
2/3 cup quick-cooking oats
4 cups flaked coconut
1 cup chopped nuts
2 cups chopped dates

My grandpa made these himself quite often, especially at Christmas time. Quick, easy, and no baking required! Also, try walnuts in place of the peanuts for a different version.

Steps:

  • Mix the oats, coconut, peanuts, and raisins together in a large bowl.
  • Stir the sugar, milk, butter, and cocoa powder together in a saucepan and bring to a boil; boil for 1 minute and immediately remove from heat. Stir the vanilla into the cocoa mixture; pour over the oat mixture and stir to coat. Scoop heaping tablespoonfuls of the mixture and drop into haystack-like piles onto waxed paper; allow to cool completely before serving.

Steps:

  • 1. Dump the peanut butter and the butterscotch chips into a medium microwave-safe bowl. Microwave on high 2 1/2 - 3 minutes or until the chips are melted.
  • 2. Stir the melted peanut butter and butterscotch chips together until they are well combined and smooth.
  • 3. Add the cereal, nuts, and fruit and mix well until everything is evenly coated.
  • 4. Cover a large cookie sheet with waxed paper or parchment paper. Using a small spoon, drop 24 haystacks onto the cookie sheet. Chill in the refrigerator until firm, then transfer to a container and keep these refrigerated for best results, but especially when the weather is hot.
  • 5. Here are the nutritional values for these - based on using peanuts: 1 haystack = 125 calories; 9g fat; 3g fiber; 12g protein; 7% daily value Vitamin E; 6% daily value iron; 13% daily value zinc.

1 c peanut butter (my family loves crunchy best)
1/2 c butterscotch chips
2 c original - fiber one - cereal
1/2 c dry roasted peanuts or other nuts of your choice (we like them with toasted almond pieces)
1/2 c dried cranberries, or cherries, or raisins or any other dried fruit you like

  • Preheat oven to 375 degrees F (190 C) and arrange a rack in the center of the oven. Also line a standard muffin tin with parchment liners (to prevent sticking) and generously grease them with oil of choice (for flavor).
  • Add grated potatoes (see notes for my go-to method) to a large mixing bowl with shallot, parsley, corn, melted vegan butter, cornstarch, salt and pepper and stir to thoroughly combine.
  • Divide mixture evenly between 12 muffin tins (amount as original recipe is written // adjust if altering batch size), filling each tin with about 1/4 cup of the potato mixture. Press down gently to form. Sprinkle the tops with a pinch more salt and pepper and bake for 20 minutes.
  • At the 20-minute mark, increase oven temperature to 425 degrees F (218 C) and bake for 10-12 minutes more, or until the tops appear golden brown, and the edges are dark golden brown.
