ORANGE-GLAZED "CAJUN" SALMON

This sweet and spicy Salmon is absolutely DELICIOUS !!! The crunchy exterior and the moist, flaky, interior make this my new favorite way to prepare Salmon......Mmmmmmmm Goodness

Orange-Glazed

Steps:

  • 1. Combine Cajun Seasoning, Brown Sugar and Kosher Salt in a small bowl. On a piece of wax paper spread out your Salmon Fillets, rub mixture liberally over all surfaces of the fish.
  • 2. In a large non-stick skillet heat two TBS of vegetable oil over med-high heat. Saute fillets over med-high heat for 4 minutes, turn and saute an additional 3 minutes. Turn off heat and add your marmalade and lime juice to the pan, swirl until melted, and carefully glaze your fish on all sides
  • 3. Plate these beautiful fillets of Salmon with fresh Lime slices and Home-Style Fries....OH MY GOODNESS!!!

4 medium boneless, skinless salmon filets
3 Tbsp cajun seasoning (salt free)
1 tsp brown sugar
1/4 tsp kosher salt
1/4 c orange marmalade
1 Tbsp fresh ime juice
8 slice fresh lime

Steps:

  • Check salmon for pin bones and remove.
  • Combine cajun spices, sugar, and salt in a small bowl.
  • Rub over all surfaces of fillets.
  • Saute fillet in oil in a large nonstick skillet over medium-high heat for 3-4 minutes.
  • Turn and saute an additional 2-3 minutes.
  • Blend marmalade and lime juice; swirl in pan until melted.
  • Carefully turn fish to glaze on all sides.
  • Fish is done when it begins to flake when tested with a fork.
  • Serve with lime wedges.

Steps:

  • Place oven rack in center of oven. Preheat broiler to high. In a small skillet over medium-high heat, stir together orange juice, brown sugar and garlic. Bring to a boil and cook until thickened and glossy, 4-5 minutes. Cool to room temperature; stir in sauce.
  • Arrange fish on a broiling pan on a rack over a rimmed baking sheet. Sprinkle with salt and pepper. Brush liberally with some of the sauce. Broil, basting twice with sauce, until fish flakes easily with a fork, 8-10 minutes. Garnish with green onions.

1/2 cup pulp-free orange juice
1/4 cup lightly packed brown sugar
1 small garlic clove, minced
1/2 tablespoon louisiana hot sauce

  • In a cup or bowl combine seasoning (cajun seasoning - salt) and rub over salmon -- you will have extra for another purpose.
  • Cook salmon in the oil in a grill pan or skillet over medium high heat for 3-5 minutes, turn and cook other side for 3-5 minutes.
  • In a small cup blend marmalade and lime juice; swirl in the skillet until melted; turning fish to glaze on all sides and cook until salmon is cooked through and begins to flake.

  • Heat butter (or oil) in a pan or skillet over medium-high heat. Sear salmon skin-side up for 3-4 minutes. Flip and sear for 2 minutes.
  • Pour in the orange juice and allow to reduce to half the quantity (it takes about 1 minute to reduce down if your pan is hot enough). Add the garlic and cook until fragrant (30 seconds). Move the salmon to the sides of the pan and add in the honey and soy sauce, stirring well to combine all of the flavours together.
  • Bring to a simmer until reduced to a nice syrup (this takes about another 30 seconds to 1 minute), and move the salmon around in the sauce to evenly coat. Remove from heat once the salmon is cooked to your liking.
