HEALTHY WHEAT BRAN APPLE CINNAMON MUFFINS
I have tried many muffins but these finally are moist have a great taste and are super easy and quick to. make. They are great for the morning with a dab of Peanut Butter on them or a great snack during the day. Lastly, they are healthy & good for you.

Steps:
- Preheat oven to 375. Combine wheat bran,wheat flour, baking soda, baking powder and cinnamon and sit aside. In a separate bowl, blend applesauce, milk,molasses,oil,eggbeater and vanilla. Add the wet ingredients to the dry and stir until moistened. Mix in the diced apple. Spoon batter into a muffin tin greased with cooking spray. Bake for 15-20 minute.

- In a bowl, combine the first six ingredients. In another bowl, whisk the egg, yogurt, applesauce and oil. Stir into dry ingredients until just moistened. Fold in the apple, raisins and orange zest., Coat muffin cups with cooking spray or use paper liners; fill three-fourths full with batter. , Bake at 400° for 18-22 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.

- In a skillet, saute apples in butter until tender, about 10 minutes. Combine cereal and water in a large bowl; stir in buttermilk, eggs, sugar, raisins and apples with butter. Combine dry ingredients; stir into apple mixture just until moistened. Refrigerate in a tightly covered container for at least 24 hours (batter will be very thick). Fill greased or paper-lined muffin cups three-fourths full. Bake at 400° for 20-25 minutes or until muffins test done. Cool in pan 10 minutes before removing to a wire rack.
