HEARTY 30-MINUTE MAC & CHEESE SOUP WITH HAM

A packaged mac and cheese dinner makes this hearty 30-minute soup a breeze to prepare. Add cream-style corn and chunks of ham, and you're ready to serve.

Hearty 30-Minute Mac & Cheese Soup with Ham image

Steps:

  • Cook Macaroni in large saucepan as directed on package, adding peppers to the boiling water for the last 2 min.; drain. Return macaroni mixture to saucepan.
  • Stir in Cheese Sauce, milk, ham, corn and parsley; mix well. Cook on medium heat 5 min. or until heated through, stirring frequently.

2-1/2 cups milk
1 pkg. (7.5 oz.) OSCAR MAYER CARVING BOARD Slow Cooked Ham, coarsely chopped
1 can (14-3/4 oz.) cream-style corn
2 Tbsp. chopped fresh parsley

Macaroni and Cheese Soup With Ham ( Crock Pot) image

Steps:

  • Combine Stock, water, soup and cubed velveeta cheese into crock pot until creamy and smooth.
  • Boil the shelled macaroni al dente, drain and pour into crock pot.
  • Add ham, blend lightly.
  • Crock pot should be set on high til liquid mixture blends, then turn to low or warm when adding macaroni and ham.
  • Let simmer for about half an hour, then serve.

  • Cook pasta according to package directions, al dente. Drain and set aside. Meanwhile, melt butter in a large soup pot, sauté onions (and carrots if you'd like) until soft and caramelized, about 5-7 minutes.
  • If needed, add another tablespoon of butter, melt in pot; stir in flour and mustard, stirring for 1 minutes.
  • Add broth and half and half, cook over medium heat, stirring constantly until steaming, about 4-5 minutes. If no "chunks" are desired, use immersion blender or place in blender and process in small batches.
  • Reduce heat to low, stirring in cheese until melted, but do not boil. Stir in cooked macaroni and ham, cooking stirring occasionally for 4-5 minutes or until heated through. Add salt and pepper to taste, I used about 1 tsp salt. If desired, add fresh or frozen peas just before serving for the freshest, brightest tasting peas.
