MEXICAN MINESTRONE
With its black beans and corn, this recipe could just as easily have been called Santa Fe Minestrone. But whatever you call it, it is a sensational soup and makes a filling meatless meal. Perfect for cool days and probably even warm ones. The flavor is wonderful and it's so easy to make! This recipe comes fro m BH&G's "Better Than Mom's Slow Cooker Recipes."

HEARTY MINESTRONE
This is a great vegetarian meal in itself. Add a panini or grilled cheese to the side for those two-handed eaters in your house. Small shaped pasta such as orzo or ditalini work best, but you can experiment with others. I find the flavors meld overnight and even tastes better as left-overs.

HEARTY MEXICAN MINESTRONE
This is an amazingly tasty - and hearty soup that's easy to make. My mother-in-law got the recipe from a cookbook, and I've made a few changes. My DH loves it, especially served with cornbread or Pillsbury cornbread refrigerator twists. Enjoy!
