HEARTY OAT LOAF
Yet another recipe from Light & Tasty. It is a good recipe, and goes great with stews. It's a good change from cornbread.

Steps:
- In a large bowl, combine the flours, 4 T oats, sugar, baking powder, and salt.
- In another bowl, combine the egg, milk, and oil.
- Stir into dry ingredients, just until moistened.
- Spread batter into an 8-inch or 9-inch round baking pan coated with non-stick cooking spray.
- Sprinkle with remaining oats.
- Bake at 350°F for 40-50 minutes or until a toothpick inserted near the center comes out clean.
- Cool for 5 minutes before removing from pan to a wire rack.
- Serve warm.

- In another bowl combine egg, milk and oil; stir into dry ingredients just until moistened.

- In a large mixing bowl, beat butter and brown sugar until creamy. Beat in egg, milk and vanilla; mix until light and fluffy.
- Stir in oats, flour, baking soda, salt and cinnamon until well blended.
- Stir in chips, raisins and pecans.
- Drop by rounded tablespoonfuls 2 inches apart unto ungreased cookie sheets. Bake at 350 for 12-15 minutes or until edges are lightly browned. Cool 2 minutes on cookie sheets. Remove from cookie sheets and cool completely on a wire rack.

- In a small bowl, stir together warm water and yeast. Set aside for 5-10 minutes. The softened yeast should look slightly foamy.
- Meanwhile, in the large bowl of a stand mixer fitted with the dough hook, combine oats, sugar, shortening and salt. Pour scalded milk over the oat mixture. When the oat mixture has cooled to lukewarm, add the yeast mixture.
- Gradually add the flour, ½ cup at a time, just until the mixture pulls away from the edges of the bowl in a soft ball of dough – do not add too much flour. Knead for about 8-10 minutes, or until the dough is smooth and elastic.
- Transfer the dough to a greased bowl and turn to coat the dough on all sides. Cover and let rise in a warm place until doubled in size, 1 - 2 hours.
