Steps:

  • In a small bowl, combine the wafer crumbs, sugar and cinnamon; set aside. , In a large skillet, saute the bananas in butter over medium heat for 1 minute. Sprinkle with crumb mixture; cook for 3 minutes or until heated through. Serve warm over ice cream.

Steps:

  • Preheat oven to 350 degree. Prepare crust by adding the butter and flour to a bowl and blend using a large fork or pasty blender. Add chopped pecans and mix. Press mixture into the bottom of a 8 x8 or 9 x 7 x2 inch pan. Bake at 350 degrees for 18-20 minutes or until light golden brown. Remove from oven and let cool. While the crust is cooling prepare the filling. In a large bowl using a kitchen aid mixer or a hand mixer add the softened cream cheese and powdered sugar. Cream the mixture until combined. Fold in 1 - cup cool whip and set aside. Prepare pudding according to package directions adding the 2 cups milk. Using a wire whisk, mix the pudding until thickened. When the crust is completely cooled spread on the cream cheese mixture evenly. Add a single layer of sliced bananas. Add the banana cream pudding and spread evenly. Top with remaining cool whip. Sprinkle the crushed vanilla wafers evenly over the top. Be sure to seal all edges. Chill for at least 2 - 3 hours before serving. Cook's Note: Pecans can be omitted if you have a nut allergy or just prefer a plain shortbread crust.

1/2 - cups pecans, chopped

1 - 8 oz package cream cheese, softened
1 1/2 - cups powdered sugar
1 - cup cool whip

Topping:
remaining cool whip

Steps:

  • Beat cream cheese & sweetened condensed milk. Add in pudding mix, milk and vanilla and beat until completely mixed. In a separate bowl, beat heavy cream until soft peaks form. Add powdered sugar and continue beating until stiff peaks form. Set 1 1/2 cups aside. Fold remaining whipped cream into pudding mixture. Line the bottom of a large trifle dish or bowl with with vanilla wafers, top with 1 sliced banana. Spread 1 1/2 cups of pudding mixture over top. Repeat layers 3 more times ending with pudding.Top with remaining whipped cream. Cover and refrigerate 4 hours or overnight.

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Grease and flour two 8-inch round cake pans.
  • Cream the granulated sugar and butter with an electric mixer until light and fluffy. Mix in the vanilla, eggs and bananas. In a separate bowl, mix the flour, baking soda and salt. Mix the flour mixture into the butter mixture, alternating with the sour cream--do not overmix. Pour the batter into the prepared cake pans and bake until a tester comes out clean, 20 to 25 minutes. Let the cakes cool before removing from the pans.
  • For the buttercream: In a stand mixer with the paddle attachment, mix the salt, confectioners' sugar, vanilla and egg whites for 5 minutes on medium-high speed. Add the butter, little by little, and mix for 10 minutes. Fold in the chopped strawberries.
  • To assemble the cake: Using a serrated knife, cut the top dome off of the cakes to make them level. Cut one of the cakes in half horizontally to form 2 layers. Repeat with the second cake for 4 layers total. Place one cake layer on a serving plate and spread buttercream on top. Stack a second layer on top and spread buttercream on top. Repeat with the remaining 2 layers. Using an offset spatula, spread buttercream on the outside of the cake. Smooth using up and down strokes, and then scrape off any excess buttercream.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees F). In a medium bowl, stir together the flour, 1/2 cup pecans and melted butter or margarine. Press into the bottom of a 9x13 inch baking dish. Bake for 15 minutes in the preheated oven, then chill until cold.
  • In a medium bowl, mix together the cream cheese and confectioners' sugar until smooth. Stir in the whipped topping. Drop spoonfuls onto the chilled crust, and spread evenly. Return to the refrigerator while you prepare the next layer.
  • In a medium bowl, mix together the pudding mixes and milk. Yes this is half as much milk as the package states. Spread over the cream cheese layer. Chill until set.
  • Spread remaining whipped topping over the top, and garnish with chopped pecans.

Steps:

  • Mash or purée the bananas and buttermilk until smooth.
  • Add the baking soda and mix.
  • This activates the baking soda and neutralizes the soda taste.
  • Cream the brown sugar and butter together until smooth.
  • Beat in the egg.
  • Add the banana purée and combine.
  • The mixture often appears curdled at this stage.
  • Add the baking powder to the flour; add gradually to the banana mixture.
  • Stir just enough to combine evenly.
  • Flavour with the extract.
  • Pour into sprayed or greased pans.
  • Fill the pans 2/3 full for even cooking.
  • Bake in a preheated 375°F oven until set in the centre.
  • A larger loaf pan will take about 45-50 minutes.
  • Reduce the cooking time for smaller pans.
  • Use a wooden skewer to test the centre.
  • Leave in the pans for 10-15 minutes before turning out.
  • Do not leave in the pans as the loaves sweat and become soggy.
