GREEN BEANS AND BEEF
My mother came up with this savory dish in the early 1950s when the budget was tight, but there were a lot of green beans in the garden. When times were really tough, she increased the beans and decreased the beef. Since then, the whole family looks forward to green bean season, because this is just plain old good food. Serve with garlic bread or homemade biscuits.

Steps:
- In a 6-quart pot, brown beef with garlic in olive oil.
- Add onion and saute for a couple of minutes.
- Add beef broth. Cover and simmer for 1/2 hour or until beef can be cut with a spoon.
- Add green beans. (If using fresh herbs, drop in the bunch of sprigs, looping excess string around the pot handle.) Cover and continue to simmer until beans are tender, about 1/2 hour.
- Serve with a slotted spoon so most of the liquid remains in the pot.

STIR-FRIED BEEF WITH GREEN BEANS AND PEANUT SAUCE

- In a mixing bowl, whisk together the egg whites, sesame oil, and 1 tablespoon of the cornstarch until foamy; season with salt and pepper. Add the beef and chives, toss to coat in the marinade and stick it in the refrigerator for 30 minutes.
- Pour the peanut oil in a large skillet or wok and place over high heat. When the oil is smoking hot, add 1/2 of the beef. (If you fry all the meat at once the oil temperature will drop and the beef will stew instead of crisp.) Fry for 2 minutes then remove to a paper towel to drain; repeat with the remaining beef. Very carefully drain all but 2 tablespoons of the hot oil into a safe container.
- Stir-fry the ginger, garlic, green onions, and chile in the remaining oil until they perfume. Add the green beans; season with salt and pepper. Stir-fry the beans for 2 minutes until crisp-tender; remove from the pan. Mix the chicken broth with the remaining tablespoon of cornstarch to make a slurry and add it to the pan. Add the soy sauce, vinegar, sugar, peanut butter, and orange peel. Simmer until the sauce is thick, about 5 minutes. Return the beef and green beans to the pan, tossing to coat in the sauce. Garnish with chopped peanuts and serve with rice.
BEEF WITH GREEN BEANS
We really enjoyed this super easy dinner which was printed in the newspaper (originally from Easy Chinese Stir-fries). Although I think you can cut the oil in half this isn't bad calorie wise using the amount listed. Also this seems like a lot of pepper but this really isn't a spicy dish -- I think the pepper tenderizes the meat some how.

- In a bowl whisk together marinade ingredients (soy sauce - pepper).
- Slice steak with the grain into 2-inch strips and then across the grain into 1/2 inch pieces (the directions say 1/8 inch pieces but mine were closer to 1/2 inch to 1 inch) and then add them to marinade, toss, and set aside.
- Heat one tablespoon oil in wok over medium high heat until hot. Add beans and stir for 1 minute. Add water and reduce heat to medium. Cover and cook for 5-10 minutes. Transfer beans to bowl.
- Add remaining oil (see note in description) to wok and increase heat to high. Add ginger and stir until oil is hot and ginger sizzles (1 minute).
- Add onion and stir for one minute.
- Add beef mixture to wok and stir until beef is done (2-5 minutes).
- Return beans and liquid to wok and stir until mixed and heated through. Discard ginger.

- Bring a large pot of water to a boil. Add green beans and cook for 5 minutes. Drain and rinse with cold water.
- Melt margarine in a large saucepan over high heat. Mixing well, add green beans, onions and garlic. Stir in soy sauce. While stirring, add bouillon and water. Reduce heat to low and simmer, stirring occasionally, for 20 minutes. Season with salt and pepper to taste.

- Prepare spaetzle according to the package directions. Keeping warm until meatballs are complete, or time it where they are done at the same time.
- In medium bowl, mix the beef, sour cream, half of the onion, and the celery.
- With moistened hands, shape the mixture into 1" meatballs; flatten slightly.
- In large skillet, heat oil over medium high heat. Cook meatballs in batches turning occasionally, until browned on all sides. Using slotted spoon, remove meatballs from skillet.
- Add remaining onion and garlic to skillet. Saute about 5 minutes or until onion is tender.
- Add flour to skillet, stirring until blended with drippings.
- Gradually stir in beef broth.
- Cook stirring constantly, until sauce boils and thickens.
- Stir in lemon juice, capers and pepper.
- Add meatballs and green beans. Cover; simmer 10 minutes or until green beans are tender.
- Spread spaetzle on an oval platter and sit meatballs and green beans in center to make the presentation.

- seed, core and cut red pepper into thin strips, set aside.
- in a wok stir fry beef over high heat until no longer pink, about 3 minutes. using a slotted spoon, transfer beef to plate.
- drain fat from wok, add oil, stir fry garlic, ginger, salt and pepper over medium heat until fragrant, about 1 minute.
- add green beans, red pepper and 2 tablespoons water, cover and steam until beans and pepper are tender-crisp, about 3 minutes.

- Cook and stir ground beef and onion in large skillet until meat is brown and onion is tender.
- Drain off any fat.
- Stir in garlic, 1 1/2 cups water, soy sauce, and molasses; heat to boiling.
- Add green beans and heat to boiling.
- Reduce heat; simmer uncovered 15 minutes.
- Blend cornstarch and 1/4 cup cold water; stir gradually into meat mixture.
- Cook, stirring constantly, until mixture thickens and boils.
- Boil and stir 1 minute.
