Steps:

  • Beat together all ingredients, except butter, parsley and paprika and spoon into a greased 9x9x2" casserole dish, dot top with butter; sprinkle parsley and paprika over top.
  • Refrigerate for at least 1 hour or overnight. Bake in a 400' oven for 35 minutes or until warm throughout.

6 medium potatoes, peeled, cubed, boiled
1 small onion, minced
4 ounces cream cheese, softened

Heavenly Sweet Potatoes image

Steps:

  • Heat the oven to 350 degrees F.
  • Spray a 1 1/2-quart casserole with cooking spray.
  • Put the potatoes, cinnamon and ginger in an electric mixer bowl. Beat at medium speed until almost smooth. Add the broth and beat until potatoes are fluffy. Spoon the potato mixture in the prepared dish. Top with the marshmallows.
  • Bake for 20 minutes or until heated through and marshmallows are golden brown.

Vegetable cooking spray
1 cans (40 ounces) cut sweet potatoes in heavy syrup, drained
1/4 teaspoon ground cinnamon
1/8 teaspoon ground ginger
3/4 cup Swanson® Chicken Broth (Regular, Natural Goodness™ or Certified Organic)
2 cups miniature marshmallows

HEAVENLY HASH BROWN CASSEROLE

This is another recipe handed down from my husband's family. During the stressful meeting-of-the-parents times over the course of our relationship, this hash brown casserole was perhaps one of the only things I could look forward to without some level of hesitation! We still make it as often as we can justify it, which sadly is less often than we wish it were. (Stupid calories.) We have tried making it with low-fat ingredients and it does work nicely, but full-fat ingredients will make it shine. Note that the sizing of frozen hash brown bags doesn't always allow for you to buy a two-pound bag, so you may need to mix and match until you get that amount. We usually have some frozen hash browns left over when we make it, which can be used in any number of other recipes as desired. Also note that the topping is technically optional, but we highly recommend using it. It adds a wonderful texture that we would miss if it weren't included. If you have any casserole left over (no promises!) then this reheats well too.

Heavenly Hash Brown Casserole image

Steps:

  • Mix all casserole ingredients together in a large bowl, then pour into a greased 9x13 pan.
  • If using the topping, mix the topping ingredients together in a medium bowl, then sprinkle it over the top of the casserole.
  • Bake at 350 degrees, uncovered, for 1 hour.

Steps:

  • Preheat oven to 350°F
  • Melt butter or margarine and set aside.
  • In a large mixing bowl combine frozen hash browns, onion, soup, milk, sour cream, cheese, salt and pepper. Pour in 1/2 cup of the melted butter to potato mix, set reserve aside.
  • Mix well and transfer to a casserole dish.
  • In a separate mixing bowl pour in cornflakes, drizzle remaining butter over cornflakes and continue to mix well until most pieces are lightly coated (cereal will be shiny but not soggy).
  • Cover all potatoes with cereal. Cover and bake for about 45 minutes.
  • Uncover and continue baking for about 30 minutes. Serve & enjoy!
  • (If you are making this ahead of time, cover cooked potatoes and keep warm, uncover and put back in the oven at 400 degrees for about 10 minutes before serving, this will make the topping crispy).

Heavenly Potato Soup image

Steps:

  • In the soup pot you are going to use, add the extra virgin olive oil, butter and diced onion and sauté on medium low heat for 15 minutes (until onion is translucent and start to caramelize). After onion is caramelized, take out of pot and set aside.
  • In the same soup pot, add cut up bacon and cook until crisp on medium-high heat. Take out of pot and set aside.
  • In the same soup pot (yes, again), add chicken broth, water and potatoes. Boil potatoes until almost soft - about 15 minutes.
  • Take some of the broth/water in a bowl and add flour to make a roux.
  • Add half and half, onion and half of bacon, heat soup to boiling, stirring occasionally.
  • Slowly add roux to desired thickness and cook until potatoes are tender.
  • Top with left over bacon, cheese and sour cream, if desired.
  • Enjoy!

Steps:

  • 1. If frozen shredded potatoes are used, thaw first. Spray non-stick spray in cooking dish. Place potatoes in dish, nearly to top. Press down slightly and add more if there is room. Don't mash them down hard though!
  • 2. Fill half and half to 2/3 of the side of the cooking dish.
  • 3. Cut a stick of butter into 1/2 teaspoon slices, and place all over top of potatoes. Salt and pepper generously over top of dish.
  • 4. These can be cooked with other foods that are being prepared and are done when there is a tan edge and some of the potatoes sticking out of the cream are toasted a little.
  • 5. For a 13" x 9" pan at 375, these take roughly 45-60 minutes if solo in the oven. This amount serves roughly 8-10 people depending on the other foods being served, and the amount of potato lovers! These are so easy and taste so good!
