CHEESY GARLIC HERB ROASTED POTATOES
We really loved these simple cheesy herb roasted potatoes. It's a delicious side dish that would be fantastic with roasted chicken or a steak. The combination of herbs pair well together. The cheese on top is a yummy final touch.

Steps:
- Preheat the oven to 425 degrees F.
- To make the potatoes: In a medium saucepan combine the vermouth, water, parsley, tarragon, lemon zest, and salt. Set aside.
- Cut the potatoes in half horizontally. Slice a small portion off of the rounded ends-- so the potatoes stand up without rolling around -- and discard. Add the halved potatoes to the saucepan. Bring to a boil over medium heat; adjust the heat to maintain a gentle simmer and cook until just fork tender, about 8 minutes. Set the potatoes aside to cool in the liquid for 5 minutes.
- Drain the potatoes, reserving 2 teaspoons of the cooking liquid. Discard the herbs and lemon zest. With a small spoon or melon baller, scoop out a little of each potato, to make a little "bowl" for the cheese.
- Toss the potatoes with the oil in a small bowl, and stand them up on a baking sheet. Bake until lightly browned, about 15 minutes.
- Meanwhile, make the filling: In a medium bowl, cream the cheese with the creme fraiche and the 2 teaspoons of reserved cooking liquid. Fold in the minced parsley, tarragon, chives, and chervil. Season with pepper, to taste.
- Remove the potatoes from the oven and let cool slightly. While the potatoes are still warm, spoon a dollop of the cheese mixture into each potato. Set the potatoes on a platter and top off with the chive segments to garnish. Serve.
ROASTED POTATOES WITH BACON, CHEESE, AND PARSLEY
These potatoes are hard to resist with their crispy roasted outsides and creamy delicious insides. I learned to shake the boiled potatoes before baking from an English caterer. Try it! It makes a difference.

Steps:
- Place an oven rack in the bottom third of the oven and preheat oven to 450 degrees F (230 degrees C).
- Place potatoes in a large pot and cover with cold water and salt. Bring to a boil; reduce heat to medium and simmer until potatoes are just tender when pierced with a fork, about 12 minutes. Drain.
- Return potatoes to the pot; cover with a lid and shake pot vigorously, about 1 minute. Uncover and cool potatoes until easily handled, about 10 minutes. Peel potatoes and cut them crosswise into chunks.
- Place bacon in a skillet and cook over medium-high heat, turning occasionally, until most of the fat has melted and bacon is tender, 5 to 7 minutes. Drain bacon slices on paper towels, reserving bacon fat in the skillet.
- Brush the bottom of a shallow 10x15-inch baking pan with half of the bacon fat and olive oil. Sprinkle salt and pepper over potatoes and arrange in the baking pan.
- Roast potatoes in the preheated oven until golden brown on the bottom, about 30 minutes. Remove potatoes from oven and reduce oven temperature to 375 degrees F (190 degrees C).
- Turn potatoes over in baking pan. Top with bacon pieces, Parmigiano-Reggiano cheese, and garlic. Drizzle remaining bacon fat on top.
- Return to the preheated oven and continue roasting until Parmigiano-Reggiano cheese is melted, about 15 minutes. Sprinkle with parsley and serve.

- Heat the oven to 375 degrees. Prepare the potatoes: Place a potato in a tablespoon and cut it into one-fourth-inch slices joined at the base (the spoon will prevent the knife from slicing all the way through). Open the slices just slightly and place a piece of bay leaf and a sprig of thyme inside the potato. Repeat with the remaining potatoes and place them in a roasting pan just large enough to hold them.
- Drizzle the fat over the potatoes and season them with three-fourths teaspoon of salt and one-fourth teaspoon of pepper, or to taste. Place the pan on the stove top on medium-high heat and cook just until the fat begins to bubble, 2 to 3 minutes.
- Place the pan in the oven and roast the potatoes, basting them occasionally with the fat, until browned and crisp, 45 minutes to 1 hour. (The recipe can be prepared up to this point one day ahead; cool the potatoes slightly, then cover and refrigerate them overnight.)
- To reheat the potatoes, warm in the roasting pan briefly on the stove top over medium-high heat, about 2 to 3 minutes, then transfer to a 375-degree oven for 15 to 20 minutes until thoroughly warmed.

- Preheat oven to 400F, line a baking sheet with a Silpat or line with aluminum foil for easier cleanup.
- To the baking sheet, add the potatoes, evenly drizzle with olive oil, and evenly sprinkle with Italian seasoning, garlic powder, salt, pepper, and toss potatoes with hands to coat evenly.
- Bake for 5 to 10 minutes. Baking briefly before adding the cheese ensures the potatoes will cook through before the cheese burns.
- Remove pan from the oven, evenly sprinkle with the parmesan, and bake for another 25 to 30 minutes, or until lightly golden brown, fork-tender, and done.
