Herbed Goat Cheese image

Steps:

  • Find a small, wide-mouth canning jar or small glass vase (3 1/2 inches in diameter by 4 inches high), just large enough to hold the two goat cheeses on top of each other with a little room to spare. Cut each cheese in half horizontally, making 2 rounds from each. (A piece of dental floss makes this easier.)
  • Place half of the first disk flat in the jar, sprinkle with salt and pepper, then with 1/2 teaspoon dill, 1 teaspoon basil, and a few red pepper flakes, and drizzle with 1/2 tablespoon olive oil. Place another disk of cheese on top and repeat the seasonings, herbs, and oil. Continue with the remaining cheese disks, piling one on top of the other with oil and seasonings in between. When all the disks are stacked and seasoned, drizzle 1 tablespoon of olive oil on top. Cover and set aside at room temperature for one hour or refrigerate for up to 24 hours. Serve at room temperature with bread or crackers for people to help themselves.

2 (6-ounce) creamy goat cheese disks, such as Coach Farm

Julienned fresh basil leaves
Crushed red pepper flakes
Good olive oil
Bread or crackers, for serving

Steps:

  • 1. In small saucepan heat oil over medium-high heat. Reduce heat to medium. Add garlic, rosemary, orange zest and red pepper. Cook, uncovered, for 3 to 5 minutes or until garlic is golden, stirring frequently.
  • 2. Cut cheese into 8 even pieces. Place in 1-quart gratin dish or 9-inch pie plate. Sprinkle with cranberries. Pour garlic oil over top. Bake, uncovered, at 375 degrees F for 10 to 15 minutes or until cheese is warm. Serve warm with KEEBLER TOWN HOUSE Flatbread Crisps - Sea Salt and Olive Oil.

Steps:

  • Preheat the oven to 375 degrees F.
  • Arrange the bread slices on 2 heavy baking sheets. Drizzle 3 tablespoons of olive oil over the bread slices. Bake until the crostini are pale golden and crisp, about 10 minutes.
  • Meanwhile, stir the herbs, lemon zest, pepper, and salt in a medium bowl to blend. Using about 2 teaspoons of cheese for each, form the goat cheese into 1-inch diameter balls. Roll the cheese balls in the herb mixture to coat completely. Arrange the cheese balls on a platter. Drizzle the extra-virgin olive oil over and around the cheese balls. Serve with the crostini. Garnish with herb sprigs.
  • The crostini and cheese balls can be prepared 1 day ahead. Store the crostini in an airtight container at room temperature. Cover and refrigerate the cheese balls.

Steps:

  • Add the goat cheese, basil, garlic powder, onion powder, oregano, salt, thyme and pepper to a stand mixer fitted with the beater attachment. Mix on low speed until you have a smooth, blended paste, about 3 minutes. Scrape down the sides of the mixer bowl and mix again. With the mixer on low speed, slowly pour in the lemon juice and beer; mix until all of the liquid is absorbed. Scrape down the sides of the bowl and mix one last time to ensure all the ingredients are fully incorporated and evenly dispersed.

One 10-ounce log goat cheese
3/4 teaspoon dried basil
1/4 teaspoon garlic powder
1/4 teaspoon onion powder

HERBED GOAT CHEESE WITH GARLIC CONFIT

This silky puree is just one more way to enjoy fresh goat cheese, which is a favorite of mine. It can be served with toasted bread and sun-dried tomatoes for a quick hors d'oeuvre, or paired with a salad of fresh greens for an appealing first course. It's also irresistible slathered on a turkey or grilled portobello sandwich. This puree is similar to the garlic goat cheese filling for my Eggplant Roulades (p. 303), but the addition of fresh basil, herbes de Provence, and chives gives it a style all its own.

Steps:

  • Prepare Garlic Confit.
  • Soften the goat cheese in a small bowl by stirring it with a wooden spoon. Add the garlic confit and garlic oil, along with the cheese, basil, herbes de Provence, if using, chives, and salt and pepper, to taste, and stir until combined. Set aside for about 1/2 hour at room temperature (or longer, in the refrigerator) to allow the flavors to blend.

Fresh Linguine with Garlic, Herbs and Goat Cheese image

Steps:

  • Bring at least six cups of salted water to a boil for the linguine.
  • While the water is heating, melt the butter over medium heat in a large nonstick skillet. Add the garlic and saute a minute or so, until it softens and barely takes on color. Stir in the tarragon and cream, bring to a boil and remove from the heat.
  • When the water is boiling, stir in the linguine and cook for two to three minutes. Drain thoroughly.
  • Then put the linguine in the skillet and reheat, stirring gently. Quickly fold in the goat cheese, season with salt and pepper and serve at once.
