Herring Savory image

Steps:

  • Soak whole salt herrings for 12 hours in several changes of cold water. Remove from water and bone and skin them, producing 4 fillets.
  • Preheat oven to 400 degrees.
  • Coat fillets thoroughly with bread crumbs. Butter small au gratin dish with 1 tablespoon butter, lay on fillets and dot with remaining butter.
  • Pour cream over and bake 5 to 10 minutes.
  • Sprinkle with chopped chives before serving.

  • Cook the potatoes, approximately 20 minutes. Cool quickly under cold water. Peel and cut into 1/2" cubes. Cook the egg for 10 minutes, cool and peel.
  • Season the mayonnaise or yoghurt to taste with pepper (and a bit of pickle juice if you prefer a thinner consistency).
  • Cut the herring into bite-size pieces. Mix with all the other ingredients. Cut up the egg to either gently mix into the salad, or use bigger pieces as garnish on top.
