LEMON-GARLIC LIMA BEANS

When I was growing up on Cyprus, my mother would often make this side dish to have with roast lamb. Although I hated lima beans when I was a kid (who didn't?), I love them now. They always remind me of home. -Paris Paraskeva, San Francisco, California

Steps:

  • Rinse and sort beans; soak according to package directions. Drain and rinse beans, discarding liquid. , Place beans in a large saucepan; add bay leaves and water to cover by 2 in. Bring to a boil. Reduce heat; simmer, covered, until beans are tender, 1-1/4 to 1-1/2 hours. Drain., In a large skillet, heat 1 tablespoon oil over medium heat. Add onion; cook and stir until tender, 3-4 minutes. Add garlic; cook 1 minute longer. Add next 6 ingredients. Stir in drained beans and remaining oil; toss to combine. Sprinkle with additional parsley.

Steps:

  • Place green beans in a microwave-safe glass dish. Add water, garlic, oil, basil, salt, and pepper and mix together. Cover the dish with a lid.
  • Microwave on high power for 5 minutes.
  • Check water level, adding more if needed, and stir green beans. Replace the lid and microwave until tender-crisp, 3 to 5 minutes more.

Steps:

  • String & cut beans into 2.5cm lengths. Place into a shallow dish with stock, cover & cook on high for 8 minutes or until beans are tender; drain & reserve stock.
  • Place butter, onion & garlic in a separet dish, cook on high for 4 mins or until onion is tender.
  • Stir in flour, then lemon juice and reserved stock, cook on high for 3 mins or until mixture boils & thickens, stirring once.
  • Combine beans with hot sauce, reheating for approx 2 mins if necessary.

1 cup chicken stock
30 g butter

Steps:

  • Blanch green beans in a large stock pot of well salted boiling water until bright green in color and tender crisp, roughly 2 minutes. Drain and shock in a bowl of ice water to stop from cooking.

  • Steam the green beans to their desired consistency (chewy or tender.).
  • Drain them and rinse with cold water to shock them into a vibrant hue.
