HIBISCUS-BLACK TEA SPRITZER

Classic black tea becomes way more interesting when you add hibiscus, orange zest, and seltzer. Bright, bubbly, and refreshing, it makes an excellent summer thirst-quencher.

Hibiscus-Black Tea Spritzer image

Steps:

  • Bring sugar and 1 cup water to a boil in a saucepan; stir until dissolved. Remove from heat; add hibiscus, tea bags, and orange zest. Steep 4 minutes.
  • Strain through a fine-mesh sieve; press gently to release liquid from bags. Discard solids; let cool completely.
  • Add 3 tablespoons tea mixture to a glass filled with ice. Top with seltzer. Serve, with orange slices.

1/4 cup sugar
1/4 cup dried hibiscus leaves
4 bags black tea
2 strips orange zest
Seltzer
Quartered orange slices, for serving

HIBISCUS FIZZ

It's hard to beat the natural sweetness, unique tartness and stunning color of hibiscus, but this fizzy drink can be modified with any chilled tea. Don't turn away at the mention of apple cider vinegar: It's decidedly tame. But if you're into the aggressive sourness of vinegar, feel free to add more.

Steps:

  • Combine hibiscus tea, agave nectar or honey, and apple cider vinegar in a large rocks glass. Fill with ice and top with soda water. Garnish with a slice of grapefruit.

1/4 cup strong hibiscus tea, chilled
1 tablespoon agave nectar or honey
1 tablespoon unfiltered apple cider vinegar
Soda water, to taste
Slice of grapefruit or lemon, for garnish

HIBISCUS ICED TEA

Steeped hibiscus flowers make a tart, fruity tea. You can also brew store-bought hibiscus tea bags as strong as you like.

Steps:

  • Bring water to a boil in a medium saucepan. Add hibiscus flowers. Remove from heat, and let stand for 1 hour. Strain through a sieve; discard flowers. Stir in sugar. Refrigerate for at least 1 hour.

1/3 cup superfine sugar

Cover and let steep for 20 minutes. After steeping, strain and press syrup to remove tarragon. Chill until at least room temperature.
  • For a single drink, muddle 6 blackberries with the leaves of a sprig of fresh tarragon and 1/8 tsp lime juice.
  • Pour 2 ounces hibiscus tea and 1 ounce tarragon simple syrup over a glass filled with cocktail ice cups.
