Steps:

  • In large bowl, place the pork, a good pinch of salt and pepper, lime juice and half of the chopped cilantro. Let the mixture sit for about 10 minutes.
  • In a medium saute pan, heat 1 tablespoon olive oil over medium heat. Add the sliced onion to the pan and saute, stirring occasionally, until the onions are browned, about 8 to 10 minutes. Season with a little bit of salt. Set aside and keep warm.
  • To make the beans: In a large saute pan, heat 2 tablespoons olive oil over medium heat and add the onion, green pepper, garlic, cumin, and the remaining half of the cilantro. Cook until the vegetables begin to soften, about 6 minutes. Stir in the beans and vinegar. Add the bay leaves. When the mixture comes to a simmer, reduce the heat to low and cook for 10 minutes.
  • Preheat a grill or grill pan over high heat.
  • Remove the pork from the marinade, shake off the excess liquid. Grill the pork for 5 minutes on each side. Cover and keep warm.
  • In a small saucepan or in a microwave, with a little bit of water, heat the peas until warmed through. Drain the water and place the peas in a food processor. Puree the peas until just smooth. Transfer the puree to a bowl and stir in the sour cream until fully incorporated.
  • Divide the rice among 4 plates. Place a piece of pork on each plate. Top the pork with a spoonful of pea puree, then the onions, and then the beans.

1 (14-ounce) can black beans, drained and rinsed
1 teaspoon red wine vinegar

Steps:

  • Preheat oven to 400 degrees F. Heat olive oil in a medium saute pan, over high heat. Season pork with salt on both sides. Dredge pork in the spice rub and tap off any excess. Sear the pork on both sides until golden brown. Cook in the oven to medium doneness, about 8 to 10 minutes.
  • Let pork rest for 5 minutes before slicing into 12 slices. Plate 3 slices per plate. Drizzle with the Bourbon-Ancho Sauce. Place a Sweet Potato Tamale, topped with Pecan Butter next to the slices of pork.
  • Combine all ingredients in a small bowl.
  • Heat olive oil in a medium saucepan over medium-high heat. Add the onions and cook until soft. Add the bourbon and cook until completely reduced. Add the remaining ingredients and cook until reduced by half. Strain through a fine mesh strainer, return mixture to the pan, and cook to sauce consistency, add the remaining 2 tablespoons of bourbon and cook for 2 minutes. Season with salt.
  • About 2 hours before you plan to form the tamales, clean the husks under running water. Soak them in warm water for 2 hours, or until softened.
  • Puree the corn, onion, roasted garlic, and stock in a food processor. Transfer the mixture to a mixing bowl and cut in the butter and shortening. Using your fingers, mix in the cornmeal, honey, and salt and pepper until there are no visible lumps of fat. Fold in the sweet potato puree, cinnamon, cloves, allspice, and maple syrup. The mixture will be a lot looser than you think it should be, but when the tamales are steamed it will dry out.
  • Remove the cornhusks from the water and set aside the best 20 husks. Drain and pat dry. Tear the remaining husks into 1-inch wide strips to be used for tying. Lay 2 husks flat on a work surface, with the tapered ends facing out and the broad bases overlapping by about 3 inches. Place about 1/3 cup of masa mixture in the center. Bring the long sides up over the masa, slightly overlapping, and pat down to close. (If the masa drips out a little at the seam, that is no problem.) Tie each end of the bundle with a strip of cornhusk, pushing the filling toward the middle as you tie. Trim the ends to about 1/2-inch beyond the tie.
  • Arrange the tamales in a single layer on a steaming rack, cover tightly with foil, and steam over boiling water for 45 minutes. To Serve: slice a slit on top of each tamale and push both ends of the tamale toward the middle to expose the masa. Top each with 1 tablespoon of Pecan Butter.
  • Combine all ingredients in a bowl. Scrape into a ramekin and refrigerate until solid, about 2 hours.

  • Place corn in a large bowl, and add water to cover. Stir well with your hands to wash kernels and loosen any corn silk or husk pieces. Drain and set aside. Bring 4 quarts water to a boil in a medium nonreactive stockpot over medium-high. Using a wooden spoon, stir in pickling lime until dissolved. Stir in corn, and return to a boil. Reduce heat to medium-low to maintain a low simmer. Simmer, uncovered, stirring occasionally, until outer layer of corn is slightly cooked but the inner core remains dry and opaque, about 1 hour. Remove from heat. Let corn sit in cooking liquid (called nejayote), covered, at room temperature 12 hours.
  • Set up the mill, and adjust the grinding plates for a fine grind. As you crank the empty mill, the plates should rub against each other with a small amount of constant friction. Place a large bowl below the grinding plates. Working in batches, place the prepared corn in the hopper, and grind, adding water, 1 tablespoon at a time, to lubricate the grinding process, 5 to 6 tablespoons total. Once all of the corn has passed through the mill, working in batches, return the corn mixture to the hopper. Continue grinding, using a wooden tamper or the handle of a wooden spoon to feed mixture into the mill and adding water, 1 tablespoon at a time, to hydrate the dough until mixture has a mashed potato consistency, 8 to 12 tablespoons total. (The texture may be slightly dry and shaggy, but you’re well on your way to soft and tender masa.) To grind masa in a food processor: Transfer corn to a salad spinner, and spin to remove excess water. (Drying the corn well is essential for grinding it evenly
