SKATE CAKE

Glide through any birthday party with a mix-easy skate cake like this one! Containers of frosting and candies add final touches.

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Make and bake cake as directed on box for 13x9-inch pan. Cool 10 minutes. Run knife around side of pan to loosen cake; remove from pan to cooling rack. Cool completely, about 1 hour. For easier handling, refrigerate or freeze 30 to 60 minutes or until firm.
  • Cut cake as shown in diagram. Tint 1/3 cup of the frosting with 3 drops green food color. Arrange pieces on foil-covered tray to form skate as shown in diagram, trimming pieces to fit. Attach pieces of cake with frosting. Frost with a thin layer of frosting to seal in crumbs. Refrigerate or freeze 30 to 60 minutes to set frosting. Frost entire cake.
  • Outline inner throat and tongue of skate with toothpick. Tint 2 tablespoons white frosting with 2 drops yellow food color; frost inner throat. Frost tongue and back of throat with green frosting. Use fruit snack to form brake, strap and back of throat. Make 4 slits in bottom edge of blade, and insert cookies for wheels. Outline skate and blade with decorating gel. Use ring candies for eyelets and wheel axles. Cut 1/4-inch-wide strips of fruit snack and use for laces. Store loosely covered.

Green food color
Yellow food color
1 roll Betty Crocker™ Fruit Roll-Ups® strawberry chewy fruit snack rolls
4 fudge-striped cookies with chocolate-covered bottoms
1 tube (0.68 oz) Betty Crocker™ brown or black decorating gel
8 ring-shaped hard candies

HIGH ROLLERS

I worked as a cook in a big grocery store while attending college. The deli employees shared some of the prep area with us. They made a ton of these High rollers. Oh they are so awesome cut as appetizers or as a sandwich at lunch with a bowl soup or chips. For the meat or cheese use what ever you like these are the ingredients they used. I am guessing on the amount. of meat and cheese needed so that zaar will except my recipe.

Steps:

  • Cover each tortilla with a thin layer of cream cheese.
  • Sprinkle with garlic powder.
  • Use half of the tortilla to layer meat ,cheese, lettuce and tomatoes.
  • Roll up the tortilla with cream cheese side rolled up last ( the cream cheese seals the edge to the tortilla).
  • Cut into 1 inch pieces and display on a pretty platter. These will go very fast.
  • Enjoy.

12 tortillas
8 ounces softened cream cheese
2 tablespoons garlic powder
1/2 lb roast beef, sliced very thin
1/2 lb honey-roasted ham, sliced very thin
1/2 lb smoked turkey, sliced very thin
24 slices colby-monterey jack cheese, very thin
1 head lettuce, shredded
3 tomatoes, sliced very thin

  • Preheat oven to 350°F (177°C). Spray a 12×17 inch baking pan with nonstick spray or grease with butter, so the parchment paper sticks. Then line it with parchment paper so the cake seamlessly releases. Spray or grease the parchment paper too. We want an extremely nonstick surface for this cake roll.
  • Using a hand mixer or a stand mixer fitted with whisk attachment, beat the egg whites and 1/3 cup (67g) granulated sugar together in a medium bowl on high speed for 5 minutes or until stiff peaks form. Set aside. In another bowl, beat the egg yolks, remaining sugar, and vanilla extract together until pale and creamy, about 2 minutes.
  • Sift the flour, 3 Tablespoons cocoa powder, baking powder, and salt together into a large bowl bowl. Pour the melted butter, coffee, and egg yolk mixture over the dry ingredients. Beat everything together on medium speed until completely combined. Using a rubber spatula or wooden spoon, gently fold in the egg whites until completely combined. Avoid over-mixing and deflating those whites. Batter will be very light.
  • Spread batter evenly into prepared pan. It will be a very thin layer. Shimmy the pan on the counter to smooth out the top. Bake for 10 minutes or until the top of the cake gently springs back when touched with your finger. Do NOT over-bake.
