HONEY CHALLAH

I use these shiny beautiful loaves as the centerpiece of my spread. I love the taste of honey, but you can also add chocolate chips, cinnamon, orange zest or almonds. Leftover slices of this sweet challah recipe work well in bread pudding or for French toast. -Jennifer Newfield, Los Angeles, California

Honey Challah image

Steps:

  • In a small bowl, dissolve yeast and sugar in 1 cup warm water. Separate two eggs; refrigerate two egg whites. Place remaining egg yolks and eggs in a large bowl. Add 2/3 cup honey, oil, salt, yeast mixture, 3 cups flour and remaining warm water; beat on medium speed 3 minutes. Stir in enough remaining flour to form a soft dough (dough will be sticky)., Pour boiling water over raisins in a small bowl; let stand 5 minutes. Drain and pat dry. Turn dough onto a floured surface; knead until smooth and elastic, 6-8 minutes. Knead in raisins. Place in a greased bowl, turning once to grease the top. Cover with plastic wrap and let rise in a warm place until almost doubled, about 1-1/2 hours., Punch down dough. Turn onto a lightly floured surface. Divide dough in half. Divide one portion into six pieces. Roll each into a 16-in. rope. Place ropes parallel on a greased baking sheet; pinch ropes together at the top. , To braid, take the rope on the right and carry it over the two ropes beside it, then slip it under the middle rope and carry it over the last two ropes. Lay the rope down parallel to the other ropes; it is now on the far left side. Repeat these steps until you reach the end. As the braid moves to the left, you can pick up the loaf and re-center it on your work surface as needed. Pinch ends to seal and tuck under. For a fuller loaf, using your hands, push the ends of the loaf closer together. Repeat process with remaining dough. Cover with kitchen towels; let rise in a warm place until almost doubled, about 30 minutes., Preheat oven to 350°. In a small bowl, whisk remaining egg whites and honey with water; brush over loaves. Sprinkle with sesame seeds. Bake 30-35 minutes or until golden brown and bread sounds hollow when tapped. Remove from pans to a wire rack to cool.

1/2 teaspoon sugar
1-1/2 cups warm water (110° to 115°), divided

2/3 cup plus 1 teaspoon honey, divided
1/2 cup canola oil
2 teaspoons salt
6 to 7 cups bread flour
1 cup boiling water
2 cups golden raisins
1 tablespoon water
1 tablespoon sesame seeds

RAISIN-CHALLAH APPLE BETTY

In this doubly lucky dessert, two Rosh Hashanah favorites-raisin challah and apples dipped in honey-come together in an ambrosial brown betty. Top it with sliced almonds and vanilla ice cream, and dig into a fruitful new year.

Raisin-Challah Apple Betty image

Steps:

  • Preheat oven to 375 degrees. Brush an 8-by-8-inch baking dish with butter.
  • Stir together brown sugar, cinnamon, and salt. In another bowl, toss apples with vinegar, 1/4 cup cider, and honey. Spoon half of apple mixture into prepared dish; sprinkle evenly with one-third of sugar mixture.
  • Toss bread cubes with butter and remaining 1/4 cup cider. Spread half of bread mixture over apples in dish. Repeat layering with remaining apple mixture, one-third of sugar mixture, and remaining bread cubes. Sprinkle surface evenly with remaining sugar mixture and almonds; loosely cover with parchment-lined foil.
  • Bake until apples in center of dish are tender and those along edges are bubbling, 45 to 50 minutes. Uncover and continue baking until liquid reduces to a syrup and surface is crisp, 10 to 12 minutes. Let cool slightly and serve warm with ice cream.

5 tablespoons unsalted butter, melted, plus more for dish
3/4 cup packed light-brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon kosher salt
2 pounds baking apples (4 to 5), such as Granny Smith or Honeycrisp, or a combination, peeled, cored, and cut into 1/2-inch wedges
2 tablespoons apple-cider vinegar
1/2 cup apple cider
6 tablespoons clover or orange-blossom honey
8 ounces raisin challah, cut into 3/4-inch cubes (about 5 cups)
1/3 cup sliced almonds
Vanilla ice cream, for serving

  • In a stand mixer bowl combine the warm water, 1 tbsp turbinado sugar, and dry active yeast. Cover the bowl with a clean kitchen towel and let it sit for 5 minutes. The yeast should be bubbling at this point.

  • Combine all of the dough ingredients and mix and knead them, by hand, mixer, or bread machine, until you have a soft, smooth dough., Allow the dough to rise, covered, for about 1 to 2 hours (or more, if you don't use SAF Gold yeast), or until it's puffy though probably not doubled in bulk., Gently deflate the dough, and transfer it to a lightly greased work surface., Pat and roll the dough into a 36" rope, tapering one end.
  • Poke any raisins or apple bits sticking out of the dough back underneath the dough's surface; this will help prevent them from burning in the oven.
  • Sprinkle the dough with cinnamon-sugar, rolling it around to coat as completely as possible., Starting with the tapered end, coil the rope loosely into a lightly greased 9" round cake pan, starting at the center and working outwards., Cover the loaf with lightly greased plastic wrap (or place it in a proof box), and let it rise until it's very puffy, 60 to 90 minutes.
