Garlic Ice Cream image

Steps:

  • Beat egg yolks and sugar until light and fluffy.
  • In the top of a double boiler over medium heat, combine egg mixture and whole milk.
  • Cook until mixture reaches 160 degrees Fahrenheit (coats back of spoon).
  • Remove egg mixture from heat; stir in honey; place in an ice bath.
  • In a mixing bowl, combine half-and-half, light cream, lemon juice, garlic, and cold egg mixture.
  • Mix until well combined.
  • Cool mixture in 40 degrees Fahrenheit in your refrigerator.
  • Place cold mixture into an ice cream freezer. Freeze according to maufacturer's directions.

Steps:

  • Soak the gelatin in cold water while you heat to a boil the milk, sugar and salt. Dissolve the gelatin in the hot milk. Cool, then add the lemon juice and garlic. Chill the mixture until slushy. Whip the cream until thick but not stiff and stir into the mixture. Freeze in a mold, or in a foil-covered tray.

2 cups milk
¾-1 cup sugar
2 tbls lemon juice
2 cloves garlic, minced
2 cups whipping cream
