FRUITCAKE CHRISTMAS COOKIES

As holiday gifts, these rich fruit-and nut-filled cookies are pretty and practical. These are great make ahead Christmas cookies -the taste actually gets better over time! -Julia Funkhouser, Carson, Iowa

Steps:

  • Preheat oven to 325°. In a large bowl, cream butter and brown sugar until light and fluffy. Beat in egg and vanilla. In another bowl, whisk together flour, baking soda and salt; gradually beat into creamed mixture. Stir in remaining ingredients., Drop dough by teaspoonfuls onto greased baking sheets. Bake until golden brown, about 15 minutes. Store in an airtight container. (Cookies are best after a few days.)

1 cup butter, softened
3/4 cup packed brown sugar
1 large egg, room temperature
1/2 teaspoon vanilla extract
1-2/3 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1-1/2 cups dates, finely chopped
4 ounces red candied cherries, halved
4 ounces candied pineapple, diced
1/2 cup whole hazelnuts, toasted
1/2 cup coarsely chopped pecans
1/2 cup coarsely chopped walnuts

VANILLE KIPFERL II

The vanille kipferl originated in Austria, and they are also very popular in Switzerland and Germany. The kipferl become even yummier after 2 to 3 days...but only for those who can resist long enough. If desired, the two ends of the kipferl can be dipped in warm chocolate and then left to cool.

Steps:

  • In a large mixing bowl, combine flour and salt. Cut in the butter until the size of small peas and mix in with your hands.
  • Mix 1/2 cup confectioners' sugar, the egg, 3 teaspoons of vanilla sugar, and ground almonds into the flour mixture. Place the dough in the refrigerator for 30 minutes.
  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Divide the dough into several parts. Roll each section of dough into logs approximately 1/2 inch thick. Cut the logs into 1-inch pieces, and bend the pieces into a crescent shape (just like a croissant). Place the kipferl on the baking sheet and chill them for 15 minutes.
  • Bake in the preheated oven until the edges are golden brown, 10 to 15 minutes. Let cool slightly.
  • Combine 6 tablespoons confectioners' sugar and 1 1/2 teaspoons vanilla sugar and toss to mix.
  • While still warm, carefully remove kipferl from the baking sheet and dip them in sugar to coat.

  • Combine all of the cookie dough ingredients in the bowl of a stand mixer fitted with a paddle attachment. Slowly combine over low speed, gradually increasing to medium speed, until the mixture comes together and forms a dough. It will be fairly crumbly and dry at first, but will become smooth as it mixes.
  • Bring the dough together with your hands. Divide in half. Working with one dough half at a time, roll the dough into a roughly 1-inch wide log. Use a knife to divide the dough into 12 equal-sized pieces (roughly 1-inch x 1-inch in size). Roll each piece into a 4-inch log, then shape into a crescent moon shape, slightly tapered at each end. Transfer the shaped cookies to a parchment lined sheet pan (or other flat surface temporarily, if one will not fit in your refrigerator), setting them apart by an inch. Chill in the refrigerator for 20 to 30 minutes or until firm.
  • Meanwhile, preheat the oven to 350 degrees Fahrenheit (175 C) with a rack in the center position. Bake the cookies for 15 to 20 minutes, or until the edges are just beginning to turn golden. The bottoms of the cookies should be golden brown, but they will be mostly pale in color.
  • Allow the cookies to cool on the sheet pan on a cooling rack for 5 to 7 minutes. Meanwhile, combine the sifted powdered sugar and cinnamon in a medium bowl. Gently roll the still warm cookies in the powdered sugar mixture. Transfer the cookies to a cooling rack and allow them to cool completely. Once the cookies have cooled completely, use a fine-meshed sieve to dust the cookies with the remaining powdered sugar mixture.
