HOMEMADE GRILLED BREAKFAST SAUSAGE PATTIES

I looked and looked at the grocery store for a breakfast sausage that did not include sugar. It was a long and fruitless search, so I decided to make it myself. After a couple of tries, yielding rather bland tasting sausage, I realized that commercial sausage sits with its seasonings and preservatives, and possibly, flavor enhancers, in the grocer's refrigerator case for a long time. When you make this sausage, please don't skip the resting time in the refrigerator, because this allows the seasonings to bloom.

Steps:

  • Mix together the pork, garlic, sage, thyme, fennel, nutmeg, salt, and pepper in a medium bowl. Add the egg white and combine thoroughly. Cover and chill for at least 15 minutes.
  • To easily form the sausage patties, rinse your hands in cold water. Divide the mixture into eighths and shape each portion into a 2 1/2-inch disk. Patties can be made to this point and refrigerated or frozen until ready to use.
  • Heat a skillet over high heat, and then swirl in the oil. Fry the sausages on both sides until completely cooked through and golden brown, about 4 minutes per side. Drain and serve immediately with pancakes, waffles or eggs. Sausage patties can be fully cooled, wrapped, and frozen for microwave reheating.

3/4 teaspoon dried thyme
1/2 teaspoon dried fennel, crushed
Pinch of ground nutmeg

  • Prepare Ground Beef: Add your ground beef to a large bowl. It’s best if the ground beef rests at room temperature for 10-15 minutes to make sure it stays tender when cooking. Cooking cold meat in a hot pan will cause the beef to become too tough.
  • Blend Sausage and Seasoning: With your hands, mix the ground beef and spices all together. Make sure you’re not overmixing the meat.
  • Heat Your Skillet: Add a thin layer of cooking oil to your skillet and turn the heat on medium high. Let heat up for a few minutes.
