HONEY BABKA

The in-laws decided to have a Polish theme Christmas this year with all Polish Dishes. I am To bring the Dessert and Bread. I know they traditionally are in a spring load pan but I don't own one so it was cooked in an 8 inch square pan.

Honey Babka image

Steps:

  • 1. Place oven rack in middle position and heat oven to 350 degrees F. Generously butter bottom and side of an 8-inch cake pan, line bottom with buttered parchment paper, butter. Dust pan with flour; set aside. Topping: Melt 7 tablespoons butter in a small saucepan. Add 1/2 cup honey and salt, stir until blended, and bring to a boil over medium-high heat. Reduce heat to low and simmer for 2 minutes. Remove from heat, stir in the vanilla and almonds; set aside to cool. Cake: In a medium bowl, whisk together the flour, baking powder, and salt; set aside. In a large bowl, using an electric mixer or by hand, cream together the butter and sugar until fluffy, drizzle in the honey, until light and fluffy. Add the eggs and vanilla beating to combine. Add flour mixture and milk, mixing until just blended after each addition, and scraping down the sides of the bowl with a spatula as needed. Turn the batter into the prepared pan, distributing evenly, and smooth the top. Pour and spread the topping mixture evenly over the cake. Place the pan on a cookie sheet and bake in a preheated oven for about 40 minutes, or until toothpick inserted into the center of the cake comes out clean. Cake should spring back when gently touched in the center. When the cake is done, let cool in the pan on a wire rack for 10-15 minutes, then turn out onto the wire rack to finish cooling completely. Cut into wedges. Excellent as is, or dust with powdered sugar, or serve with sweetened whipped cream, if desired.

Steps:

  • Put the milk in a small pan over a low heat until it feels slightly warm (not hot). Dissolve the yeast in a small bowl with a tablespoon or two of the milk and a large pinch of the sugar. Set aside for 10 mins.
  • Meanwhile mix 265g of the flour, the remaining sugar and ¼ tsp salt in the bowl of a stand mixer fitted with the dough hook and stir to combine. Make a well in the flour and once the yeast has started to foam, pour it in together with the beaten egg and the butter. Add the yeast mixture, then use the remaining milk to rinse all the yeast out of the bowl and add this too.
  • Mix to combine the ingredients until they form a ball of dough, then continue to knead it for 5-6 mins until elastic and shiny. (You can do all of this by hand if you do not have a mixer.) If the dough is very sticky you can add more of the flour a tablespoon at a time. Put the dough in a lightly oiled bowl and cover with a clean tea towel. Leave to rise at room temperature, around 45 mins, then put in the fridge to rise for at least 6 hrs or overnight.
  • To make the filling, chop the dates if they are whole, then put them in a heatproof bowl with 90ml boiling water and leave to soften for 30 mins. Blitz to a paste in a food processor, adding more water, a tablespoon at a time if it is too thick. Don't add too much - you want a spreadable paste and not a liquid. Once the consistency is right, add the cinnamon and stir to combine.
  • Lightly oil a 23cm loose bottom cake tin and line with baking parchment. Put the chilled dough on a lightly floured surface and roll into a 40cm x 30cm rectangle. Spread with the date paste and sprinkle with the chopped pistachios. Roll up from one of the shorter sides to make a log. If the dough has become soft, lift onto a baking sheet and chill for 20 mins in the fridge until firm. (If the log is too large for the fridge, carefully slice it in half using a sharp serrated knife.)
  • Use a sharp serrated knife to cut the log into slices 5cm thick. You should have about seven slices. Arrange them in the prepared tin, with the spiral facing upwards, beginning with one in the centre and the others around it. Leave space between them so they can spread as they rise. Cover and leave in a warm space to prove until they have doubled in size (about 1 hr-1 hr 30 mins).
  • About 20 mins before the end of proving, heat the oven to 220C/200C fan/gas 7. Lightly brush the dough with the beaten egg. Bake for 20 mins.
  • Meanwhile, make the sugar syrup by dissolving the sugar and honey in 2 tbsp water in a small pan over a low heat. As soon as the babka buns come out of the oven, brush generously with the honey syrup and leave to cool in the tin. Serve warm or at room temperature. Will keep for up to three days covered in an airtight container.

  • Combine all of the dough ingredients except for butter in the bowl of an electric mixer fitted with the paddle attachment. Start with the lesser amount of milk. If the dough seems dry, add more milk 1 TSBP at a time.
  • When the dough has just barely come together but there are still some visible dry patches, switch to the dough hook. Then, add the room temperature butter a tablespoon or two at a time, letting it fully incorporate between additions.
  • Increase the speed of the dough hook to just below medium and knead the dough until it’s shiny, smooth, and elastic. Shape the dough into a ball and let it rise in the mixing bowl, covered, for 1½ to 2 hours, or until doubled in size.NOTE: If you check the dough at 1 hour and it feels firm to the touch and has not visibly increased in size, move the bowl into an off oven, with the oven light turned on, to finish rising.

  • Preheat the oven to a 350°F. Line a large baking sheet (11×17) with a parchment paper and set aside (Make sure the baking sheet has an edge of approximately 1” to prevent the batter from running out). In a large bowl, beat 8 eggs, 1 cup granulated sugar and 1/2 tsp salt until light and fluffy (8-10 mins on high). In a small bowl, combine and stir 2 tsps baking soda and 2 tbsps white distilled vinegar – it will fizz up. Microwave 1 cup honey for about 30 seconds. Then, add the baking soda/vinegar mixture, honey and 16 oz sour cream to the batter. Beat on low for 30-40 seconds just until combined (do not over-beat it). Sift 2 1/2 cups all-purpose flour into the batter and with a mixer on low, beat just until the flour is combined. The batter will be runny and lose the fluffiness a bit, but make sure to not over-beat it otherwise the cake texture will turn out hard and won't be as fluffy.
  • Pour all the batter at once into the prepared baking sheet and level to the edges with a spatula. Bake for 30-32 mins, until the toothpick inserted comes out clean. Place a cooling rack over the baked cake and flip over the baking sheet. Remove the parchment paper from bottom of the cake. Place a large cutting board onto a cake and flip over again; let the babka cool. (Do not leave the cake upside down on a cooling rack for long, or it will leave cooling rack squares on top of the cake and might break/mush the top of it). Once cooled, cut off edges with a sharp knife, and cut whole babka into an even squares, to about 1.5-2”, or your desired size.
  • TO MAKE THE FROSTING: In a medium bowl, combine and beat 8 oz cream cheese and 1/2 cup powdered sugar for about 1 min on low-medium speed. Add 8 oz cool whip and continue beating on high until frosting is thick, for about 5 mins.
  • Transfer the frosting to a piping bag with Wilton tip #199 attached. Pipe the frosting onto each square. Enjoy right away or refrigerate and keep enjoying for next 3-4 days!!
