- 1. Preheat oven to broil. Set the top rack of the oven to the highest level. Place salmon fillets on a parchment-lined baking sheet. Set aside. 2. In a small bowl, whisk together barbecue sauce, honey, and Sriracha. Spread the sauce with a basting brush on top of each salmon fillet. Broil for 5 minutes, then baste each salmon fillet again. Return to oven and broil 3-5 minutes more. As soon as the salmon easily flakes with a fork, remove it from the oven. 3. Allow to sit for 5 minutes before serving. My son insisted on me posting this recipe. We found it on the back of a bottle of ketchup we got when we were traveling up in Canada last summer. Both of my kids love eating salmon cooked this way.

- Preheat grill to medium high, rub salmon filets with oil and season with salt and pepper.
- Combine honey, ketchup, Worcestershire, lemon juice, dill, ginger and pepper.
- Grill salmon for 5-8 minutes per side, basting with honey BBQ glaze, until salmon is cooked through.
- Serve immediately, drizzled with any leftover sauce.

HONEY BARBECUED SALMON OR TROUT
I really do not like the taste of fish, but if you catch it, you got to eat it... This is really good with a strong oily fish like a Macinaw. I was given this recipe from a fishing quide at Priest Lake, Idaho. This is the best way to impress your fishing buddies. You can also use almost any large fish like trout and steelhead.

- Filet the fish. Leave the skin on. You will end up with two sides..If you are getting the fish at the butcher, have them cut it for you.
- Preheat bar-b-que. Set temperature to 350 degrees. Spray grate with a non stick spray..
- Mix the honey and dill together in a container. You may add more or less dill to taste. You may need more or less honey depending on the size of fish.
- Lay fish, skin side down on grate. Brush on honey mixture to cover flesh. Close lid. Maintain temperature at 350 degrees.
- Brush on honey mixture 2 or 3 times, as it cooks..Sometimes I squeeze a little lemon juice on, too.
- Check the fish often..Do not turn. It is done when the juices turn a white color and meat flakes.
- Remove to a plater and serve.
- The only time that the skin stuck to the grate, was when I was unable to control the heat and it was to hot.
HONEY STEELHEAD TROUT
Steps:
- Preheat oven to 450 degrees F (230 degrees C). Line a baking sheet with aluminum foil.
- Place trout, skin-side down, onto the prepared baking sheet. Cover trout with honey and sprinkle mesquite seasoning, black pepper, and seasoned salt over honey. Press honey and seasonings into trout using a fork.
- Bake in the preheated oven until fish flakes easily with a fork, 15 to 20 minutes.

- Preheat the oven to 450 degrees F. Line a baking sheet with aluminum foil. Spray the foil with cooking spray if you plan on eating the salmon skin. (If you do not plan on eating the skin, you can skip this step.) Place the salmon fillets, skin-side down, onto the prepared baking sheet.
- Whisk together the honey, lime zest, and juice in a small bowl. Remove 2 tablespoons of the mixture to another small bowl and set aside. Brush the remaining honey-lime mixture over top of the salmon fillets.
- Combine the brown sugar, cumin, paprika, garlic, 2 teaspoons salt and a few grinds of pepper in a medium bowl. Press the brown sugar mixture all over the salmon (about 1 heaping teaspoon on each portion). Crimp all 4 sides of the foil to create a border around the salmon to help collect the juices so they don't spread and burn. Bake until the glaze is shiny and turning golden in some spots, and the salmon is firm and flakes easily when pressed, 10 to 12 minutes.
- Drizzle the reserved honey-lime mixture over top of the salmon just before serving.

- Combine the soy sauce, ketchup, lemon juice, oil and rosemary; pour two-thirds of marinade into a large resealable plastic bag; add fish. Seal bag and turn to coat; refrigerate bag for 1 hour, turning once. Cover and refrigerate remaining marinade for basting. , Drain and discard marinade. Place fish in a single layer in a well-greased hinged wire grill basket. Grill, covered, over medium heat for 8-10 minutes or until fish is browned on the bottom.
