BRAISED COD WITH CHICKPEAS

Braised Cod with Chickpeas image

Steps:

  • If canned chickpeas are used, rinse and drain them. Combine the cooked or canned chickpeas in a saucepan with the garlic, peppers or flakes, 3 tablespoons of the olive oil, and 1/4 cup of water. Bring the liquid to a simmer, cover the pot, and simmer for 20 minutes.
  • Preheat the oven to 400 degrees.
  • Remove and discard the whole peppers, if you used them. Add the cumin to the chickpeas and spread half the mixture in the bottom of a 9-inch-square baking dish. Place the fish on top, sprinkle with salt and pepper, and finish with the remaining chickpeas. Drizzle the remaining 3 tablespoons of olive oil over the top. Cover and bake in the preheated oven for 30 minutes, until the fish is just flaky but not falling apart; check after 20 minutes.
  • Serve the fish hot or warm, garnished with cilantro or parsley and lemon wedges.

4 or 5 hot peppers or 1 teaspoon red-pepper flakes

2 pounds cod fillets, about 1 inch thick

  • If you’re using canned chickpeas, drain and rinse. If using our Instant Pot Chickpeas, simply ensure your chickpeas are drained of excess cooking liquid and proceed as instructed.
  • To a large mixing bowl add chickpeas, harissa paste, lemon juice, minced garlic, salt, maple syrup, paprika, and olive oil and stir gently to combine.
  • If you’re using canned chickpeas, they’ll likely need more seasoning at this point since they weren’t seasoned on the front end (I find canned beans to be less flavorful and fresh than home cooked). If using our Instant Pot Chickpeas or another method from scratch, you likely won’t need much more seasoning. In either case, taste and adjust flavor as needed, adding more garlic for zing, lemon for acidity, harissa for heat, maple syrup to balance the heat, paprika for smokiness, or olive oil for creaminess or herbal, peppery flavor.
  • You can use your chickpeas immediately, or (our preferred method) transfer to a storage container and allow to marinate for at least 1-2 hours. Marinated chickpeas will keep covered in the refrigerator for up to 1 week (depending on freshness of ingredients). We haven’t tried freezing them but suspect that they would be fine for up to 1 month.

  • Preheat oven to 200°C/390°F. Pat cod dry with paper towels and season with salt. Thinly slice chilis. Zest and juice the lemon. Set zest aside. Whisk together honey, lemon juice, and chilis and season with salt and pepper.
  • Rinse canned chickpeas under cold running water and dry with a clean kitchen towel. Transfer to a baking sheet with a generous amount of vegetable oil. Season the chickpeas with salt and pepper, then roast for approx. 25 min. or until golden brown. Remove the baking sheet from the oven and toss chickpeas with lemon zest. Set aside.
  • Heat some vegetable oil in an ovenproof pan and add the cod fillets skin side down over medium heat. Cook for approx. 7 min. Glaze with some of the honey marinade and transfer to the oven. Bake until cod is cooked through, approx. 3 min. Remove cod from the pan.
  • Add the remaining honey marinade to the pan and whisk over medium-high heat until it’s reduced by at least half into a thick glossy glaze. Serve cod on top of the crispy chickpeas with a hearty drizzle of the reduced hot honey glaze. Enjoy!
