HONEY-GLAZED WINGS

My family favors chicken wings that are mildly seasoned with honey, ginger, soy sauce and chili sauce. Tasty and tender, they are sure to be a hit at your next get-together. They're a crowd-pleaser! -Marlene Wahl, Baldwin, Wisconsin

Honey-Glazed Wings image

Steps:

  • Cut chicken wings into three sections; discard wing tip section. Set wings aside. In a small saucepan, combine the honey, soy sauce, oil, chili sauce, salt, garlic powder, Worcestershire sauce and ginger. Cook and stir until blended and heated through. Cool to room temperature. , Place the chicken wings in a large resealable plastic bag; add honey mixture. Seal bag and turn to coat. Refrigerate for at least 8 hours or overnight., Drain and discard marinade. Place wings in a well-greased 15x10x1-in. baking pan. Bake, uncovered, at 375° for 30 minutes. Drain; turn wings. Bake 20-25 minutes longer or until chicken juices run clear and glaze is set.

Honey Hoisin Glazed Wings image

Steps:

  • Arrange an oven rack in the lower third of the oven and preheat the broiler. Toss the chicken with the vegetable and sesame oil and sprinkle with the salt and pepper in a large mixing bowl. Arrange the chicken on a wire rack set over a rimmed baking sheet. Broil the chicken, turning after 10 minutes, until the chicken is golden brown, crisp and cooked through, about 15 minutes. Meanwhile, combine the vinegar and crushed red pepper in a small saucepan and bring to a simmer. Remove the saucepan from the heat and whisk in the honey, hoisin and soy sauce. Pour into an extra-large bowl. Add the chicken to the bowl and toss with the honey glaze. Transfer the chicken to a platter and garnish with the scallions and sesame seeds.

12 chicken wings, wing tips removed, split at the joint
3 tablespoons vegetable oil
1 tablespoon toasted sesame oil
1 teaspoon kosher salt

1/4 cup rice vinegar

Hot Honey-Glazed Wings image

Steps:

  • In a bowl, combine the flour, 2 teaspoons salt, the onion powder, garlic powder and cayenne pepper. Add the chicken wings and toss to coat.
  • Heat 2 inches of vegetable oil in a pot until it registers 350˚ F on a deep-fry thermometer. Working in batches, add the wings and fry until browned, 8 to 12 minutes. Remove with a slotted spoon and drain on a rack set on a baking sheet.
  • Whisk the melted butter, hot honey, vinegar and red pepper flakes in a large bowl. Add the wings and toss to coat.

  • Salt and pepper wings to taste.

  • 1. Rinse the chicken wings under cold running water, then drain and blot dry with paper towels. Make 2 or 3 deep slashes, to the bone, in the meaty part of each wing. Place the wings in a large bowl and sprinkle with the garlic, salt, pepper, and Accent (if using). Turn the wings to coat with the seasonings, then cover and let marinate, in the refrigerator, for 2 to 4 hours.2. Preheat the grill to medium high.3. When ready to cook, oil the grill grate. Heat the honey just to warm in a small saucepan on the side burner of the grill, if you have one, or over low heat on the stovetop. Thread each chicken wing on a skewer, running the skewer through all three sections to hold the wing open as wide as possible. Arrange the wings on the hot grate and grill, turning with tongs, until the thicker wing sections are no longer pink near the bone, 12 to 16 minutes in all, brushing the wings during the last 4 minutes of grilling with the warm honey.4. Steps:

  • Combine all ingredients, except chicken wings, together in a saucepan and heat to boiling; reduce heat to low and simmer for 10 minutes, then let cool slightly.
  • Cut the wings by slicing the drumettes from the rest of the wing (I leave the tip on, some people like those) and place the pieces in a bowl and pour the warm marinade over them; marinate for several hours or, preferably, overnight, in the fridge.
  • Preheat your oven to 500°; line a jelly-roll pan (cookie sheet with sides) with foil (I use that new, nonstick foil, it's great), spray with non-stick spray, and arrange the wings in a single layer, use an extra sheet if necessary.
  • Brush wings liberally with marinade then roast for about 40 minutes, turning once, until the wings are cooked and crispy brown at the edges.
  • You can serve these hot, cold or room temperature and they're delicious, or serve as part of a main meal with rice and a vegetable.
