GELATINA DE LECHE-MEXICAN MILK JELLO

This is one of my favorite Jello recipe. I love it. You can add other flavors to it, coconut, strawberry,Horchata to name just a few. I didn't have my own picture, so I searched for one. :)

Gelatina de Leche-Mexican milk Jello image

Steps:

  • 1. In a small bowl add 1 1/2 cups of hot water, add the envelopes of gelatin and mix well. Set aside. **evaporated can size is 12 fl oz. condensed milk is 14 fl oz**
  • 2. Mix remaining ingredients in a sauce pot and put on medium heat, stirring constantly just prior to boiling. Now spoon in gelatin mix, (it will be pretty firm) and stir constantly for about 5 minutes and move away from stove. Let it cool down, but do mix once in a while. Once cool mix one final time, and pour into your mold. Refrigerate until Jello is nice and firm.

2 can(s) evaporated milk
2 can(s) regular milk, use evaporated milk cans for measure
2 can(s) condensed milk
6 pkg knorr unflavored gelatin
3 Tbsp pure vanilla extract

Creamy Gelatin Dessert image

Steps:

  • Sprinkle gelatin over boiling water. Remove from the heat; stir until gelatin is completely dissolved, about 5 minutes. Stir in marshmallows until melted. Stir in bananas. Drain pineapple, reserving juice. Add pineapple and cold water to gelatin mixture. , Pour into a 13-in. x 9-in. pan; chill until set. In a small saucepan, combine the sugar and flour. Gradually stir in reserved pineapple juice. Add butter; bring to a boil. Cook and stir for 2 minutes. Remove from the heat; cool to room temperature, about 35-40 minutes. , In a small bowl beat the cream until firm peaks form; fold into pineapple juice mixture. Spread over gelatin mixture. Sprinkle with nuts. Chill for 1-2 hours.

2 cups boiling water
2 cups miniature marshmallows
4 large ripe bananas, cut into 1/4-inch slices
1 can (20 ounces) crushed pineapple
2 cups cold water
1/2 cup sugar
2 tablespoons all-purpose flour
2 tablespoons butter
1 cup heavy whipping cream
1/2 cup chopped walnuts

Steps:

  • Place rice in a blender; cover and process 2-3 minutes or until very fine. Transfer to a large bowl; add almonds, cinnamon stick, lime zest and hot water. Let stand, covered, at room temperature 8 hours., Discard cinnamon stick. Transfer rice mixture to a blender; cover and process 3-4 minutes or until smooth. Add sugar; process until sugar is dissolved., Place a strainer over a pitcher; line with double-layered cheesecloth. Pour rice mixture over cheesecloth; using a ladle, press mixture through strainer., Stir in cold water. Serve over ice. If desired, sprinkle with cinnamon and serve with lime.

  • Wash and drain rice. Combine rice with cinnamon sticks in water and soak overnight in the refrigerator.
  • After the rice has soaked for at least 8-10 hours, preferably overnight, discard the cinnamon sticks and pour rice and water into a blender. Add ½ tsp cinnamon and blend on low for 2-3 minutes until well blended. Pour blended rice mixture through fine mesh sieve two times and then through cheesecloth one more time to remove all gritty bits of rice.
  • Pour strained mixture into a pitcher, add skim milk, brown sugar and vanilla and stir well to combine. Add more sugar if needed, to taste. Best served with ice & a dash of ground cinnamon.
