Steps:
- Cook the pasta in dutch oven while you stir fry the fresh vegetables in light oil. Drain pasta, add vegetables, and approximately 1/4 C salad dressing. Add cooked chicken or salmon and tomato wedges. Serve with parmesan cheese sprinkled over.
HOT PASTA SALAD
I know that pasta salads have had a bad rap, but I really like them. This one is delicious with fantastic lemon flavor, tuna and crisp veggies. Enjoy! (This recipe uses canned tune. I haven't tried using fresh tuna yet, but I will next time. I think maybe I'll grill it and slice it up, still pink... yum!) Derived from BBC's "Good Food" magazine (March 2007) with some variations.

Steps:
- Cook the pasta according to directions.
- Cook the peas according to directions.
- In another bowl, mix the mayonnaise, lemon juice, and 1 T of the tuna oil and mix.
- Drain the rest of the oil from the tuna.
- Mix the tuna with the mayo mixture.
- Drain the pasta and toss with the mayo mixture, peppers, onion, and carrot.
- Sprinkle the rocket and Parmesan over the top just before serving.

- Cook pasta according to pack instructions. Meanwhile, tip the mayonnaise, lemon juice and 1 tbsp of the tuna oil into a large bowl and mix. Drain the rest of the oil from the tuna, then flake the fish into the bowl and mix well.
- Drain the pasta and toss it with the mayonnaise mixture, peppers and onions. Scatter over the rocket just before serving.

- Bring a large pot of salted water up to a rolling boil. Add in your pasta. Cook according to the directions on the package. Drain it your pasta and rinse with cold water, set aside.
- In a small bowl, combine together the red wine vinegar, olive oil, pepperoncini juice, oregano, red pepper flakes, salt and pepper.
- In a large bowl, add in the pasta, sun-dried tomatoes, pepperoncinis, sliced tomatoes, cubed gouda, and basil. Pour in the dressing and mix well. Taste and add more salt and pepper or pepperoncini juice or vinegar as needed.
- Cover the bowl with foil or plastic wrap and place the bowl in the fridge for at least 2 hours before serving. Serve cold or at room temperature.
