HOT & SWEET BBQ SAUCE

This recipe originally came from Barbecue! Bible Sauces, Rubs, And Marinades by Steven Raichlen. I tweaked it a bit and tried canning it. CAME OUT GREAT!!! It's a super easy one-pot recipe. It's my all time favorite BBQ sauce.

HOT & SWEET BBQ SAUCE image

Steps:

  • 1. Combine all the ingredients, except for the ketchup, in a large, deep, heavy, nonreactive saucepan and bring to a simmer over medium heat. Cook, uncovered, until all the ingredients are dissolved, stirring constantly, about 5-10 minutes. Stir in the ketchup and bring to a boil, stirring well because ketchup has a tendency to spatter. Add salt and pepper to taste
  • 2. Reduce the heat slightly and gently simmer the sauce, uncovered, until dark, thick, and richly flavored about 30 minutes, stirring often.
  • 3. Ladle the hot sauce in hot, clean half-pint or pint canning jars, leaving 1/2-inch headspace. Run a small spatula around the inside of each jar to get rid of air pockets. Wipe jar rims and tighten lids to finger-tip tight.
  • 4. Process filled jars in a boiling-water canner for 20 minutes (start timing when water begins to boil). Remove the jars from the canner and place upright on a towel to cool completely.
  • 5. After jars cool, check seals by pressing middle of lid with finger. If lid springs back, lid is not sealed and refrigeration is necessary. Let jars stand at room temperature 24 hours. Store unopened jars in cool (50ºF to 70ºF), dry, dark place. Use within one year. You also store in your fridge for up to a month.
  • 6. This should yield 4-5 pints. You also store in your fridge for up to a month.

3/4 c packed dark brown sugar
1 c apple cider vinegar
1/2 c molasses
1/2 c honey
1/4 c dark rum or whiskey
1/4 c yellow mustard
2 Tbsp liquid smoke flavoring
2 Tbsp chili powder
1 Tbsp garlic powder
1 Tbsp black pepper
2 Tbsp allspice, ground
1/2 tsp ground cloves
8 c ketchup
kosher salt and pepper to taste

SWEET, SPICY, AND STICKY BBQ SAUCE

I use this sauce on ribs and then slow-cook 'em on the smoker. A guaranteed hit for any gathering; this sauce is my absolute favorite! May use immediately or keep in an air-tight container in a refrigerator up to several weeks. Brush sauce on ribs as ribs are finishing.

  • In a large saucepan, saute onion in oil until tender. Add garlic; cook 1 minute. Stir in the chili powder, cayenne and pepper; cook 1 minute longer. , Stir in the ketchup, molasses, vinegar, Worcestershire sauce, mustard and pepper sauce. Bring to a boil. Reduce heat; simmer, uncovered, for 30-40 minutes or until sauce reaches desired consistency. Cool for 15 minutes. , Strain sauce through a fine mesh strainer over a large bowl, discarding vegetables and seasonings. Store in an airtight container in the refrigerator up to 1 month. Use as a basting sauce for grilled meats.

Use this toward the end of cooking as you would for any BBQ meat such as pork, ribs, or chicken. I have even used it on beef and hamburgers, sausages, hot dogs, or anything you want, for the most part. I use it on everything from ribs to roasts to hamburgers to hot dogs. Even goes good with a good old classic grilled cheese sandwich. This is a great all-round BBQ sauce. Use right away or cool to room temperature, transfer to jars or containers, and refrigerate. The sauce will keep for several months in the fridge.

Steps:

  • Combine tomatoes, onion, and garlic in a large stock pot and bring to a boil; lower heat and simmer 30 minutes or until vegetables are very soft. Working in batches, puree vegetables until smooth with Harvest Pro food mill or in the bowl of a food processor.
  • Return tomato mixture to the pot and add remaining ingredients, bring to a boil over high heat, stirring frequently. Lower heat and simmer until thickened and darker in color, about 1½-2 hours, stirring occasionally to prevent scorching.
  • Prepare boiling water canner while sauce is cooking. Heat jars in simmering water until ready to use. Do not boil. Wash lids in warm soapy water and set aside with bands.
  • Ladle hot BBQ sauce into a hot jar leaving a ½-inch headspace. Remove air bubbles. Wipe jar rim. Center lid on jar and apply band; adjust to fingertip tight. Place jar in boiling water canner. Repeat until all jars are filled.
  • Process jars for 20 minutes, adjusting for altitude. Turn off heat, remove lid, let jars stand 5 minutes. Remove jars and cool 12-24 hours. Check lids for seal. They should not flex when center is pressed.
