Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Grease a 10" pie plate.
  • Place milk, sugar, Bisquick, butter, eggs, vanilla, and lemon juice in container of a blender.
  • Cover and whirl on high speed for 15 seconds.
  • Pour into prepared pie plate.
  • Bake in oven until a knife inserted in center comes out clean, about 50 to 55 minutes.

Steps:

  • Cut ends off lemon; slice into 3-4 sections and place in blender.
  • Pulverize.
  • Then add sugar and eggs.
  • Blend well.
  • Pour into 8-9 inch frozen pie crust and bake at 350F for 35-40 minutes.
  • Top with whipped cream or topping of your choice and garnish with fresh raspberries or other berries.

Steps:

  • 1. Place all ingredients in a blender, one at a time.
  • 2. Blend until well mixed.
  • 3. Pour into a greased 10-inch pie pan. Bake at 350 degrees F for 1 hour.
  • 4. When done, crust will be on the bottom, custard in the middle, and coconut on top.

1/4 c margarine, softened
1 c white sugar
1/2 c flour
1/4 tsp salt
1/2 tsp baking powder
2 c evaporated milk
1 c flaked coconut
1 tsp vanila

IMPOSSIBLE COCONUT PIE I

The pie makes its own crust. Just mix in a blender, bake and serve warm. You may leave out coconut if you wish.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9 inch pie plate.
  • Combine milk, sugar, biscuit mix, eggs, butter or margarine, and vanilla in blender container. Cover, and blend on low speed for 3 minutes. Pour into prepared pie plate. Let stand about 5 minutes. Sprinkle with coconut.
  • Bake for 40 minutes. Serve warm.

  • Cut the lemon into sections so you can remove the seeds. Put everything in the blender (yes, the whole lemon, rind and everything!) and blend until very smooth. You may still have some very small flecks of lemon rind – that’s great.
  • Unroll pie crust and press into a 9-inch pie pan. Pour filling into the pie crust. Bake for 45 minutes or until set. Dust with powdered sugar and fancify the whole thing with a lil lemon slice or twist. Serve warm (it’ll be a little looser) or chilled for about 2 hours (thicker, more dense, and my personal preference).
